You’re likely having these negative reactions to wheat products, which hide in many different pre-made foods, especially vegetarian foods. Try reducing the number of different ingredients you consume on a daily basis. For example, eat whole fruits and veggies you bought and chopped up yourself, raw nuts (not legumes), organic eggs, and don’t be afraid to try eating free range chicken breasts and grass fed cow meat for a 30 day health experiment. Use healthy oils like olive oil or coconut oil to cook meat and make salad dressings. I am a type 1 diabetic and my husband is a type 2. I have just finished battling 7 years of abdominal tumors that I had 25 lbs of tumors removed from my body. Because of the removal of these, my body has been going through some adjustments. I am dumping magnesium and iron, and the doctors don’t know why, plus I have become constipated with the high doses of iron that I have to take, but then I take high doses of magnesium that causes bouts where I need to be near a bathroom. Talking to a nutritionist and my doctors, a change in diet has been recommended. They both brought up a modified Paleo or Keto diet. My nutritionist wants me to eat there foods for sure everyday, pearl barley cooked in bone broth (homemade of course), greens ( cooked kale, collards, turnips, mustards, etc) and fish. The barley is to help with fiber and magnesium, and the greens for fiber and magnesium and iron. Will adding a cup of cooked barley make a bad difference in either of these diets, or will that amount everyday throw off all good effects of this diet? I am so tired of taking synthetic solutions for my problem. I am on excellent pre and pro-biotics and have seen great results from those. Sooooooo…. Here goes. This cookie took me, like, 5 seconds to make. Okay, more like 5 min, but really? 5 min? Why the hell not?! And let me tell you… These are the closest to the real thing that I’ve ever tried!! So yum!! These are perfection!! My children love these and they don’t even care that they are eating something healthy. I like to make 2-3 pans of them and save them for later. Hi Cheryl- I’m glad yours ended up turning out but I can assure you the recipe amount of 1 cup of almond flour is not wrong. I have no idea how you had a batter that was anything near “runny” as there’s only 1 tablespoon of milk & 3 tablespoons of melted oil as far as liquid goes (I’m not counting the honey as it’s so thick). I’ve made these many times and the batter is usually quite thick. The only thing I can think of is perhaps you measured the oil before melting rather than after?

I have some ideas on to why cookies might be flat. When I measured the oil into the pan before melting it was easy to get a little too much in there, so I measured again after melting on the way to the bowl and sure enough there was a good tablespoon left melted in the pan. So make sure to remeasure after you melt the oil. Also baking soda does expire so if you aren’t using it a lot make sure the check the expiration date. I am not over weight. I am quite small actually. Maybe just need to tone up. I have severe fibromyalgia. After my doctor and I have done tons of research and learning more and more about it we found that I need to cut out a bunch of stuff that I consume to help lower my inflammation, exhaustion and digestive problems. Yes, I did it right. Only 3 ingredients. Are you like some people and just pass up plantains in the grocery store? I used to be like that. I didn’t even know what they were. They looked weird and terrible. I don’t think like that anymore since I’ve gotten to know them. You can either choose them when they are on the yellow side or the green color side. The only difference is that the yellow ones are riper and therefore sweeter. The green ones are less ripe and won’t taste as sweet. That choice is just up to your preference. The yellow ones are a little harder to work with because they are more sticky. I do recommend green but you should experiment and have fun. Don’t worry about the skin being brown and a little bruised. The skin on plantains is really thick so the fruit is more protected than with a banana.

I believe in parchment paper. It’s a DREAM for clean up and prevents burning. I hardly ever bake without it, and these ginger cookies are no exception. Some ginger cookies have a tendency to scorch on the bottom, and I’ve found that a light-colored baking sheet lined with parchment paper (or a silicone baking mat) is a fail proof plan for perfectly baked ginger cookies. They came out pretty tasty but are a little too coconut-y for my liking (I think maybe I used too much coconut oil, which I will adjust next time). However, something might have been off with my dough overall b/c it was brown in color, not light like yours. I just found out that my friend has a nut allergy so I needed to alter a few recipes. After reading through a few paleo web pages, I’m finding that sunflower flour is a good 1:1 substitute for Almond flour. I’m testing that ratio with these cookies now. For a while, because of an issue with the amount of nuts that are “OK” for the diet I started substituted a home-made pumpkin seed flour and entree’s taste just as delicious!
I think granola bars are pretty healthy so my kids and I eat them for snacks all the time. They aren’t just for breakfast anymore. These granola bars come together quickly and are so easy to make. Chopping the nuts is the most time-consuming part and you probably know that isn’t very hard. You can use whatever nuts you like or have on hand. You can forget the chocolate if you’d like.

I found this recipe weeks ago and have made them countless times already. The first time I made them, I didn’t have enough almond meal/flour so I topped it off with coconut flour and flax meal. Turned out to be about 3/4 cup almond meal, 1/8 cup coconut flour and 1/8 cup flax meal. I have since made them just as this recipe calls for and while I love them both ways, I think I like the addition of coconut and flax best. It’s a great alternative if you like a little cakiness to your cookie. The dough was not as formable in this alternate version, as it has a tendency to fall apart, but it’s manageable and once it’s baked it holds together nicely.
Late stone age farmers ie the first farmers, (people probably beginning to build stone huts however some type of farming began while people where still living in caves.) but beginning to domesticate animals where found to have collected milk though it not thought they drank the milk but made an ancient type of yogurt or cheese since milk fats where found in jars dating from the late stone age. Cheese was more popular in medieval times and much earliar than actually drinking milk though again it wasn’t exactly like modern cheese. Also since it took time to produce it wasn’t something they ate on a daily basis. Yougurt was more popular with ancient farmers too, it thought they made yougurt before cheese. Actually drinking milk itself is a much more recent conception.
Amanda -I haven’t ever tried them with less baking soda, but you might be able to give it a try. Baking soda often helps cookies spread (baking powder often “puffs,” baking soda often “spreads”), so you’d probably have some spread differences. If they spread too much, you can head this off by adding an additional 1-2 Tbsp of flour to the batter. If they don’t spread, you might be able to use less flour to offset the problem. Again, I don’t know for sure since I haven’t tested them with less baking soda, but I’d love to know what you think if you give them a try. Just wanted to make sure you’re chilling the dough to make sure it’s very cold and also make sure your pan is cold. If I use two cookie sheets, I eat bwttwre results between batches rather than putting room temp dough on a warm cookie sheet. Take out when baked, the use parchment paper so you can quickly transfer the cookies on top of a cold granite counter top. That’s how mine come out perfect.
