Contrary to popular belief, our body’s preferred source of fuel is fat, not carbohydrates. Therefore, quality fats are an important part of the paleo diet. Fats won’t make you fat. Instead, they’ll encourage your body to burn stored energy and can even contribute to reducing cravings for sweet, carbohydrate loaded foods. People who include some healthy fats with every meal have also been shown to eat less because fats are so inherently satisfying.
So iv been baking Paleo goodies for some time now and have had some good successes with my own recipes.. though i was nervous about attempting cookies. My boyfriend LOVES cookies.. but usually forces himself to refrain until special occasions due to being health conscious. I wanted to make him something that he could enjoy and that wouldnt “taste healthy” as a lot of paleo baked goods do.

Oh, wow. These are GOOD. I made them exactly as is. First, I couldn’t stop eating the dough (which is bad because I’m pregnant and there is raw egg). I just had my first one and I am going back for another. Love how these are healthy to help keep my pregnancy weight gain in check, but also totally craving satisfying! Diabetic here, on Metformin 2x/day (2) 500MG tablets (total of 4 pills a day). My doc has not reduced my dose (yet) but my readings were about 120, then dropped to mid-90’s after being on paleo for a few months, and losing 30 pounds. Was it the paleo diet or the weigh loss? Don’t know. But happy. I ran out of Metformin for a few days and my readings never got to 120. So, doing better without and on paleo than with the Rx and off paleo. Looks like if I drop another 15 pounds I might drop the Metformin. As I lost the weight, I also stopped experiencing the extremity nerve pain.

Hi Dave, sorry for your troubles! More likely than not, the problem is that your almond flour is too coarse. I’ve added a link in the recipe with the brand I recommend (Honeyville) – it’s blanched and very fine and acts much more similarly to a traditional wheat flour than some coarser almond flours/meals do. In the meantime, you could try baking the cookie dough you have in a pan to make blondies so it doesn’t go to waste. Hope it still tastes delicious! Happy New Year.

Some aspects of this diet sound good and logical but, How does anyone know that prehistoric homosapiens were at all “healthy”? Maybe the life span of Cro magnon was so short because of poor diet and extreme physical labor. Has anyone seen long term proof of such a basic intake? Don’t misunderstand me, I think the chemistry we’ve developed and added to our foods can’t be good but, I can’t help wonder if finding a balance in what we eat is better than eliminating foods that we can process and use. Broken down to a basic form of existence, all life has the same properties of nutrition and survival of the species. Whether it’s milk from a coconut or milk from a goat, it has the same purpose, just a different presentation. I think this diet is a good start to eating less processed foods, which to me seems more important than eliminating milk from a different animal than ourselves. Maybe the unnatural way we produce milk from cows has more to do with lactose intolerance than the essence of that product. Maybe genetic modifications of grains have led to gluten intolerance. The life span of humans has certainly increased. Maybe not treating our food with growth enhancement or pesticides would be the answer to allowing us to consume some foods that are emerging as not inherently good for us. Just a few ideas to ponder. I’m going for another cup of organic coffee.

Much better than expected! I had to use honey instead of maple syrup (I was out)… And I wasn’t sure they were going to turn out well – the batter was super crumbly, so I added 2 more tbsp of coconut oil and then using a cookie scoop, I mashed the batter into it to make rounded balls. The ones I mashed in like that didn’t crumble when they came out of the oven – they stuck together well.

I just made these for the second time and they were even better!!! I sifted the almond meal/flower and chopped pecans and chocolate chips . .wow. . .they are so so good! A new trick is to measure out the honey in the same tablespoon you just did the coconut oil as it will slide right on out! OMG! To me, these are the “holy grail” of chocolate cookies and even better because they are paleo! They were so easy to make and better than the usual tollhouse recipe I grew up with. I chopped up the chocolate super fine so when it baked, the cookies came out into flat discs- which I happen to LOVE a cookie like that. So I was very pleased! The best part about paleo baking is that you actually get filled up and even though they are such delicious cookies, I was very satisfied after only eating two. These could possibly be my favorite cookie, ever. I love chocolate and peppermint together. They are so easy to make that my daughter makes them all the time. They have to be baked or cooked at all. The hardest part is waiting for them to cool and set in the frig for an hour. The candy canes are just for show because they aren’t Paleo. You can get all the peppermint flavor you need with the peppermint essential oil. If you aren’t 100% strict Paleo, go ahead and add a little bit of peppermint candy; I won’t tell anyone.

Wow, these look fantastic…definitely need to make these! I had bad cravings last night and I solved with almonds and raisins, plus a little coconut butter. Probably too many of each of these but it tasted good! When they had been cooking for 14 min I used a spatula and flattened them a bit in the oven and then continued to cook until browned. wonderful recipe! The only change was I subbed 1/3 c of splenda brown sugar baking blend for 1/3 of the swerve. (since I didn’t have molasses) They have a great taste and texture. my 14 yr old daughter that is doing Low carb with me loved them! I used sugar free mini chocolate chips from our local Amish Store.
