These chips aren’t actually made from anything except the cheese. It’s asiago cheese, a hard cheese that doesn’t contain much lactose and is therefore looked upon as OK by some Paleo followers. If you know that you don’t process any cheese well you’ll want to take a pass on this one, but if you can handle it in occasional doses it’s worth it. These sweet and sour gummy candies are actually good for you. Pretty weird huh? They are really easy and actually a lot of fun to make. All you do is mix the ingredients, put them into a mold either by pouring or using a plastic bag with a small hole in the corner. Then either put them in the refrigerator or freezer to set depending on how big of a hurry you’re in. You could make them any shape or color you’d like. The diet may lead to weight loss in the short term, as well as lower blood pressure, controlled blood sugar, and other possible benefits. (1, 2) So it’s no surprise that this eating approach has gained popularity since the publication in 2010 of the hit book The Paleo Diet, authored by Loren Cordain, PhD, a professor emeritus at Colorado State University in Ft. Given the high volume of abdominal tumors and iron and magnesium malabsorption, have you been tested for Crohn’s disease or Ulcerative Colitis? Also the other reply mentioning the different forms of iron and magnesium is excellent advice. Most over the counter iron is not only hard on the digestive system, but also does not absorb well anyway. I believe there are three if not four different kinds. In regards to the barley not being ‘paleo’, does it really matter? If you are following a paleo diet for medical purposes and the barley aids and does not hinder your health, then THAT is part of YOUR diet, regardless of whether it’s proper paleo or not. I follow a mostly paleo diet, not as a fad, but because it’s what my gut prefers.

I did notice if you let them sit they did appear to have that same “look” however I also realized they are a softer cookie. I had a handful of people try them and all but one could not tell they were not your “typical” chocolate chip cookie. If I wouldn’t have told the one they were grain free/dairy free they would have been on board with the rest. These are really delicious. I agree they are better than the sugary floury traditional cookies! Even my 2.5 year old loves them. I used high quality butter and brown sugar style Sukrin gold for the sweetener, Lilly’s stevia-sweetened chocolate chips, and used walnuts instead of pecans. Did not use molasses. I think using real butter makes a big difference in the taste.

These are very good and very flexible. The first time I made them, they came out flat and browned at the bottom and were delicious that way! Determined to make them as illustrated here, I tried again. I cut the honey to 1tbs (both times, I left out the almond milk) and adjusted the amount of almonds to get a thicker dough. This time, they stayed round and were crunchy throughout (I blame my thin cookie sheet). The first flat batch was better and I will make them that way again.
*I get a lot of questions about the difference between almond meal and almond flour. Although the terms are generally used interchangeably in packaging, your best bet is to look for a product that is called blanched almond flour (or blanched almond flour/almond meal).You want a product that is very finely ground and cream colored without any specks of brown in it. I recommend Honeyville Blanched Almond Flour (found online) or Bob’s Red Mill Blanched Almond Flour (found online or in the natural aisle of many supermarkets; sometimes, in stores, the packaging reads “blanched almond meal/almond flour”). What we’re typically looking for when deciding on a snack is whether it will provide the fuel to get you to your next meal. Hello. This was my first time making a paleo/gf cookie. They came out pretty tasty but are a little too coconut-y for my liking (I think maybe I used too much coconut oil, which I will adjust next time). However, something might have been off with my dough overall b/c it was brown in color, not light like yours. Maybe I just need to use a little more almond flour & a little less coconut sugar, but I welcome any thoughts/suggestions you have. I will definitely be trying again. Thanks!
If you’re used to combating the afternoon slump with yogurt, you’ll love this Paleo chia pudding. While the chef here enjoys it at breakfast, it’s really simple to convert this into a snack: instead of making these in a bowl, prepare in mason jars for perfect portions you can take to work with you. Not a big banana fan? Swap in your favorite frozen berries or mangoes instead. I do suggest keeping the sliced almonds in for some healthy fats and crunch.

Roll the dough into 8 (75-gram) balls and place the remaining 1/4 cup (43 grams) of chocolate chips on the top and on the sides of the dough balls. You can also roll them into 16 smaller balls but then you need to adjust the baking time (a few minutes less than recommended below). Place 4" apart on the prepared baking sheet. Press the cookies down lightly with the palm of your hand.

Recommended fruit intakes can vary from individual to individual. That being said, fruit can often be quite rich in fructose and in excess quantities has the potential to be harmful. You may want to consider eating sweet potatoes as a carb source and or increasing your fat intake in proportion to your fruit intake. Ultimately it comes down to how you feel, and if you are exercising regularly you might have a metabolism that can handle the higher fruit intake. Good Luck!

Chocolate chip cookies without any sugar or chocolate wouldn’t really taste like chocolate chip cookies anymore…you could try substituting a calorie-free sweetener for the sugar if that’s what you’re looking for. The perfect cookie for a winter themed, “Frozen” themed or even a Christmas party. Kids love them, especially little girls that love the movie “Frozen”. They are made with only a few ingredients so they are pretty easy to make. I made mine by using a piping bag and a large star tip so you don’t need a cookie press unless you already have one or want to buy one. They are like a crisp butter cookie with almost a shortbread texture. The coconut palm sugar is the only sweetener that will achieve a crisp cookie.
