So I’m not one to make my food in football shapes. Or use dye to color my food in my favorite teams colors. Probably because I don’t have a favorite team. But my home states team (the Broncos) are in the Superbowl this year so I’m obligated to act excited. I just made these not even 20 minutes ago and they were DELICIOUS. It’s the first time I have ever baked paleo cookies and they came out great. I had to bake them a little longer because instead of putting them on parchment I put them in mini cupcake tins to make them into little portable bite sized snacks I added unsweetened coconut flakes to it because I love coconut flakes. So I didn’t have almond flour and thought I could substitute 1/2 c coconut flour & 1/2 c of tapioca flour. Needless to say I couldnt even roll them into balls. The dough would not stay together. So I added an egg and about a tbsp more almond milk. The dough finally looked normal, but after pressing onto a cookie sheet and baked for 10 minutes, I took them out and they dry and tasteless.

So grains aren‘t allowed in the paleo diet but seeds are allowed. Grains are seeds. Also I doubt whether the ancestors of Europeans ever ate bananas or sweet potatoes. Some people do have problems after eating dairy products and gluten and too many carbs and too much sugar especially. But eliminating foods just because they are fairly new to our diets doesn‘t make sense. Some new foods are much better tolerated than others. A low carb diet is good for decreasing insulin resistance and a paleo diet would most likely be a lower carb diet than a diet containing lots of grains and refined sugars. So a paleo diet may also be good for decreasing insulin resistance. But it might not be superior to a low grain and low refined sugar diet. There‘s a lot we don‘t know and there are individual differences in food tolerances. Personaly I‘m just experimenting to see what diet works best for me. Place the chocolate shards into a glass mixing bowl. You have two options for melting the chocolate: use a double boiler or a microwave. Most folks don’t own a double boiler, but you can make your own by grabbing a metal or glass bowl that fits snugly in a medium saucepan. Also made these and got one big thin flat mess, with an almost rubbery texture. My baking soda is still fresh, i didn’t use ANY substitutions and i’ve double checked the recipe multiple times and according to it I made them correctly. I just got to know about this paleo diet from one of my friend. I have gained some 6-7kgs in 2.5 months that’s because i fractured my leg and no workouts. Did someone reinvent the Paleo diet out there that everyone is following different guidelines? I want to try the baked avocado and egg with miso butter but then I find miso is soy. Another fad which will die off soon. If you want a lean, fit body just go out more and start moving. Sitting behind a computer 10 hours a day will not make you lean no matter what you eat. We’ve made these a couple times now and the 2nd time they were amazing!! The first time, I tasked my daughter, a self-proclaimed baker, with making them. We didn’t have any eggs in the house so I made an egg replacement using flax/water. She thought she was using parchment paper but actually used wax paper to line the pan. OOPS!! So the 1st batch were a flop. Definitely stick with making them SMALL!! She opted for large cookies and they spread out to cover almost the entire cookie sheet. So the next time, I made them myself with an egg, parchment paper, and kept them small. Like I said, they were amazing!! I’m low carving, so I used Xylitol as my sweetener and didn’t use quite as much as the recipe called for simply because I prefer things a little less sweet these days–I’m turning into my Grandma! When I was in my teens she suggested not adding as much sugar as recipes called for (Grandpa was diabetic at that point) and I thought she was crazy. Now I’m in my 40s and my taste buds have totally changed. But anyway! Thanks so much for a delicious recipe! They definitely hit the sweet spot of my craving!

I just made these cookies-made a couple of changes because ithese were the ingredients I had on hand but they still came out great-thick but airy, better than any store bought. I substituted little less than half the almond flour for oat fiber. Used jumbo eggs and 1/8 teaspoon more vanilla. Swerve powdered not granular, and 100 percent cocoa bakers chocolate. They came out fantastic and I’m hoping the oat fiber lowered the carb count some;) (also I baked at 3:20 for 14 min) Thanks!!
