wow! i made a couple of your no grain cookie recipes before but this one takes the cake, er, cookie! this time, however, i opted for 1 1/2 cups almond meal with 1/2 cup buckwheat flour. i needed to add about 1/3 cup water to make the dough come together. along with vegan choc chips, i threw in some walnuts and ate three cookies before they were completely cool! since my dough only make 12 cookies, i will probably eat them all in a day. : ) https://www.youtube.com/watch?v=qQoCFZzal_s
*I get a lot of questions about the difference between almond meal and almond flour. Although the terms are generally used interchangeably in packaging, your best bet is to look for a product that is called blanched almond flour (or blanched almond flour/almond meal).You want a product that is very finely ground and cream colored without any specks of brown in it. I recommend Honeyville Blanched Almond Flour (found online) or Bob’s Red Mill Blanched Almond Flour (found online or in the natural aisle of many supermarkets; sometimes, in stores, the packaging reads “blanched almond meal/almond flour”). These sweet potato chips do a great job of filling in for regular potato chips. They have the same texture you’re looking for, both as you pick them up and once you put them in your mouth. Sounds like a drag to me. Dairy is healthy and really has no alternative. Over consumption is the issue. My life without dairy would be bland, tasteless and thoroughly boring. I raised five children on a dairy predominant diet and they are extremely healthy adults. NOTHING tastes better or is as satisfying as real butter, it’s natural especially if you buy organic. Wow, these look fantastic…definitely need to make these! I had bad cravings last night and I solved with almonds and raisins, plus a little coconut butter. Probably too many of each of these but it tasted good! Having these cookies in the freezer would have been perfect…I need to get it in my head that cravings will happen and I need to prepare, because usually I end up scrounging whatever sweet thing I can find!
Grains – especially wheat and anything with gluten. White rice is the least harmful of all grains and is added to dishes on occasions or for variety, it’s also part of the Perfect Health Diet protocol, which is what I follow. Because the density of almond flour varies brand to brand depending on how finely ground it is, you may possibly want to add an extra tablespoon or two of almond flour to your dough if you are using a different brand than the ones I’ve mentioned. Unless you drink extremely much, you always gotta remember, that your Liver keeps repairing itself, it is quite a magical Organ! Fructose is hard on the Liver as well… In the end, i’ve heard about people with Cirrhosis Liver, who never Drinks, just like i hear about people with Lung Cancer, who never Smoked!!! Hi Maureen, the butter can be cold or room temp, I recommend cold if it is hot inside, as the butter will quickly soften. If your kitchen is cold you can let it soften a bit at room temp before creaming it with the sweetener. These cookies can be more flat or not as much depending on how big and mound like you make them when putting them on the baking sheet. I find using a cookie scoop helps with this & makes them more uniform. I hope this helps. Grain free cookies can be so finicky sometimes 😉
I made these tonight and they came out fantastically! I used splenda and i’m about to be using Eryithrol (i know i spelled that totally wrong) anywho! I made my mom love these cookies as well and she’s not a fan of dark chocolate! i used an 85% dark chocolate lindt bar it was delicious! thank you so much for a wonderful recipe i will be making for ever!

My baking soda is still fresh, i didn’t use ANY substitutions and i’ve double checked the recipe multiple times and according to it I made them correctly. I wanted to point out the similarity between the paleo diet and the more revolutionary diet being used by diabetics (as opposed to that espoused by the World diabetic associations) to remove carbs from the diet and have high protein / moderate fat to achieve almost normal blood sugar levels. Historically high carb diets rich in grain / starch were recommended and still are to an extent.
