I like these Paleo pumpkin chocolate chip cookies because they are full of pumpkin flavor, they are not too sweet and they have kind of a cakey texture. That’s what I expect from a pumpkin cookie. These are really good, I don’t want to brag but they are a lot better than the ones you buy from the store. Even those made in a bakery. They are actually pretty healthy too because they only have 1 tablespoon of oil in the whole batch and only 2 tablespoons of honey. We made these this afternoon and they were great! My husband is fond of mint with chocolate so instead of chocolate pieces or chips, we used Andes Mints pieces which I have only found at Walmart. We used a 1″ cookie scoop and came out with 30+ cookies. We wanted them a little more crisp, so we cooked them longer than the recipe’s 10 minutes. I recommend you read the books “Wheat Belly” or “Brain Grain” for the science behind these arguments. Neither are paleo books, and in fact barely mention them, but they both discuss the benefits of low carb, low wheat/gluten diets through personal testimonies and are actually really enjoyable! The former is written by a cardiologist and the latter by a neurosurgeon. I think the term “diet” for Paleo is silly because how you choose to eat healthy should just naturally become part of your lifestyle and not be considered a diet at all. As for the humanitarian and health issues (water and insects too) mentioned by Christopher, these will always be issues with any type of food we eat.
Ideally, if you have a good Paleo breakfast and lunch, you’ll often find you don’t feel hungry and don’t need to snack. If you do find yourself hungry between meals, try eating more at meals (are you consuming enough satiating fat in your meals?). These are very good and very flexible. The first time I made them, they came out flat and browned at the bottom and were delicious that way! Determined to make them as illustrated here, I tried again. I cut the honey to 1tbs (both times, I left out the almond milk) and adjusted the amount of almonds to get a thicker dough. This time, they stayed round and were crunchy throughout (I blame my thin cookie sheet). The first flat batch was better and I will make them that way again.
These could possibly be my favorite cookie, ever. I love chocolate and peppermint together. They are so easy to make that my daughter makes them all the time. They have to be baked or cooked at all. So grains aren‘t allowed in the paleo diet but seeds are allowed. Grains are seeds. Also I doubt whether the ancestors of Europeans ever ate bananas or sweet potatoes. Some people do have problems after eating dairy products and gluten and too many carbs and too much sugar especially. But eliminating foods just because they are fairly new to our diets doesn‘t make sense. Some new foods are much better tolerated than others. A low carb diet is good for decreasing insulin resistance and a paleo diet would most likely be a lower carb diet than a diet containing lots of grains and refined sugars. So a paleo diet may also be good for decreasing insulin resistance. But it might not be superior to a low grain and low refined sugar diet. There‘s a lot we don‘t know and there are individual differences in food tolerances. Personaly I‘m just experimenting to see what diet works best for me. I just made these for the second time and they were even better!!! I sifted the almond meal/flower and chopped pecans and chocolate chips . .wow. . .they are so so good! A new trick is to measure out the honey in the same tablespoon you just did the coconut oil as it will slide right on out! I doubled the recipe and it made 12 nice size cookies .. next time I’ll triple . .everyone I’ve shared with love them and even my hubby who doesn’t eat my type of Paleo-style of eatin’ .. good eats peeps!
No on paleo diet but awesome cookies. My husband’s favorite and kids loved it too. Very crispy cookies. Used 1/2 cup of coconut oil to help it form better. Probably could have used a little less. Kids allergic to almond so used whole wheat pastry flour. Used Agave nectar 6 Tablespoons, added 1 tablespoon of chia seeds and 1 tablespoon of flax seed ground. Going paleo means casting aside the Western aversion to fats, especially those of the saturated variety. Yes, I did it right. Only 3 ingredients. Are you like some people and just pass up plantains in the grocery store? I used to be like that. I didn’t even know what they were. They looked weird and terrible. I don’t think like that anymore since I’ve gotten to know them. You can either choose them when they are on the yellow side or the green color side. The only difference is that the yellow ones are riper and therefore sweeter. The green ones are less ripe and won’t taste as sweet. That choice is just up to your preference. The yellow ones are a little harder to work with because they are more sticky. I do recommend green but you should experiment and have fun. Don’t worry about the skin being brown and a little bruised. The skin on plantains is really thick so the fruit is more protected than with a banana.
The key difference is fruit is allowed in paleo and some high GI vegetables like Beets/ carrots / sweet potato which are not allowed in the diabetic diet as the sugar from these releases to quickly into the blood stream for it to be controlled (in terms of sweet potato its release into the blood is the same as a potato so interesting to see it allowed in paleo)

store,then the hike and chase involved in hunting with a spear could be maybe even more chalenging. so yea i’m still a firm beliver in getting pleanty of exercise over any diet is the key to healthy living, the rest is more moderation in what you injest. granted some diets can help ease the new health problems poping up and being an epidemic problem in the 20th centry, choosing to stay away from prcessed foods and drink as much as possible is also a good idea, but then again not a big problem in moderation. a few times a month to eat fast food and soda’s no prolem, a cupple times a week still not too wory, but a few times a day watch out you are in for some truble, espacialy if you do not exercise regularly.
