I just made these cookies-made a couple of changes because ithese were the ingredients I had on hand but they still came out great-thick but airy, better than any store bought. I substituted little less than half the almond flour for oat fiber. Used jumbo eggs and 1/8 teaspoon more vanilla. Swerve powdered not granular, and 100 percent cocoa bakers chocolate. They came out fantastic and I’m hoping the oat fiber lowered the carb count some;) (also I baked at 3:20 for 14 min) Thanks!!

The best conventional chocolate chip cookie recipes always contain the same ingredients (albeit in slightly different ratios), and if you have a sweet tooth like I have always had, you’ve likely made enough of them to be able to recite the ingredients off of the top of your head: butter, brown sugar, white sugar (cream together); add vanilla and eggs; combine with dry ingredients consisting of flour, salt, and leavener. Fold in regular chocolate chips (boo milk chocolate). Plop scoops of cookie dough on a baking sheet, bake, eat.
I just made these and the dough was WAY more wet than yours. I double checked all the amounts and everything looked good. I wonder if it’s because I’m in AZ and everything is just so much hotter / more melty?? It also could have been because I scooped then leveled the flours into the batter, so maybe it was slightly less flour / more air? Did you do that? Maybe I used a larger egg? Nuts and seeds – these guys are nutritious but many nuts and seeds are high in Omega-6 fatty acids which can be pro-inflammatory if consumed in large quantities and when your diet is not balanced by an equal amount of Omega-3 fatty acids found in oily fish like salmon and sardines, eggs and leafy greens. Basically, don’t gorge on buckets of nuts and seeds every day. The same goes for nut meals and flours such as almond meal. Whenever possible, try to activate nuts and seeds by soaking and then dehydrating them back, which makes them easier to digest.

I typically don’t comment on blogs, but now I feel compelled to! I literally make this recipe almost weekly, and everyone I know loves it so much! I’m asked to make it for get togethers, and even as gifts for people…this is the most incredible Paleo cookie recipe out there! Hello. This was my first time making a paleo/gf cookie. They came out pretty tasty but are a little too coconut-y for my liking (I think maybe I used too much coconut oil, which I will adjust next time). However, something might have been off with my dough overall b/c it was brown in color, not light like yours. Hi Dave, sorry for your troubles! More likely than not, the problem is that your almond flour is too coarse. I’ve added a link in the recipe with the brand I recommend (Honeyville) – it’s blanched and very fine and acts much more similarly to a traditional wheat flour than some coarser almond flours/meals do. In the meantime, you could try baking the cookie dough you have in a pan to make blondies so it doesn’t go to waste. Hope it still tastes delicious! Happy New Year.

I just made these cookies, and like several other people, I ended up with flat pancakes–very oily. I could tell based on your description of scooping the batter and pressing down to form half circles and then tapping the batter out, etc., that the consistency was wrong even before I baked them. Much too sticky and moist to shape the batter at all. Is that 3 tablespoons of coconut oil correct? The only change I made was rice milk for almond milk. The taste is okay, but again, very oily.

These are such fun to make! I used regular sugar instead of coconut sugar because I was out. They are very quick to mix up (I didn’t wait for the nut butter or egg to come to room temperature because I am impatient) and very quick to bake. Water will be, if not now, the driving force of conflict in the coming decades as oil is now. Sprouts are notorious for bearing pathogens and outbreaks of salmonella. I could go on; depleted fisheries with mercury and plastic particulate tainting, indigenous peoples murdered, raped, enslaved or displaced for planation world crops and grazing, monoculture agriculture destroying biodiversity and a healthy food base. I know! The ability to process dairy IS something that humans have adapted to! That’s lactose tolerance vs. intolerance. I am a lactose tolerant person, which by definition means that I still produce the enzyme lactase despite being over the age of 3, and I’m therefore able to process milk. Lactose tolerance is an example of the fact that humans are still evolving. It is a trait that has developed in Africa and Europe over the last few thousand years. It is a trait that has become more and more widespread due to the fact that it benefited our ancestors, and still benefits us, to be able to draw nutrients from yet another source.

These are not lies. Dairy is just not that great for adults. I am trying to learn about better ways of eating. I am open to suggestions and I appreciate the rationale being given in this article. If you don’t agree don’t try it. I personally and finding it very helpful and I know for a fact from my body’s reaction much of the information contained in this article is right for me.

Yes, I’ve used half coconut flour. Still in the oven but they tasted good before I put them in! I also found them too crumbly the first time I made them, so I added a flax egg and half a cup of almond milk and then squeezed them into balls and flattened them. Much better consistency. And I find they need to bake 2-3 minutes longer, maybe even a bit more.

Yeah I am frustrated too. I keep going to Paleo recipe sites on the web and many are using non paleo ingredients. Very confusing. Did someone reinvent the Paleo diet out there that everyone is following different guidelines? I want to try the baked avocado and egg with miso butter but then I find miso is soy. Can you offer a yummy substitute for the miso part of the miso butter? Id really appreciate it.
Hi Maureen, the butter can be cold or room temp, I recommend cold if it is hot inside, as the butter will quickly soften. If your kitchen is cold you can let it soften a bit at room temp before creaming it with the sweetener. These cookies can be more flat or not as much depending on how big and mound like you make them when putting them on the baking sheet. Kudos! I tried 4 different paleo/grain-free cookie recipes today, plus 1 mix. For a holiday cookie party I’m attending, I’m making choc chip s’more cookies (2 cookies with marshmallow between, then dip half the “sandwich” in dark choc). I had to find a great paleo or at least GF option for the choc chip cookies. I tried a mix that worked well, so I knew I had that back up but I don’t want to spend that much on mix, plus it seems like a cop out. Hence the 4 well-rated choc chip cookie recipes I auditioned tonight…
Following a Paleo diet can have really terrific benefits for some people. Abstaining from inflammatory grains, eating more protein and enjoying a variety of fruits and veggies can help you lose weight and feel good. But snacking while being Paleo can be confusing at first. I just found out that my friend has a nut allergy so I needed to alter a few recipes. After reading through a few paleo web pages, I’m finding that sunflower flour is a good 1:1 substitute for Almond flour. I’m testing that ratio with these cookies now. For a while, because of an issue with the amount of nuts that are “OK” for the diet I started substituted a home-made pumpkin seed flour and entree’s taste just as delicious!
I am not over weight. I am quite small actually. Maybe just need to tone up. I have severe fibromyalgia. After my doctor and I have done tons of research and learning more and more about it we found that I need to cut out a bunch of stuff that I consume to help lower my inflammation, exhaustion and digestive problems. Very frustrating. After more research I have learned that the Paleo “diet” is pretty spot on to how I know have to eat. I am so grateful to have a guidline to follow and not doing this alone. I am tired of being in chronic pain everyday all day. Along with other things I am doing to help my body be restored Paleo sounds to be a promising adventure. I found this recipe weeks ago and have made them countless times already. The first time I made them, I didn’t have enough almond meal/flour so I topped it off with coconut flour and flax meal. Turned out to be about 3/4 cup almond meal, 1/8 cup coconut flour and 1/8 cup flax meal. I have since made them just as this recipe calls for and while I love them both ways, I think I like the addition of coconut and flax best. It’s a great alternative if you like a little cakiness to your cookie. The dough was not as formable in this alternate version, as it has a tendency to fall apart, but it’s manageable and once it’s baked it holds together nicely.

When eating Paleo you’ll have to get used to the process of being very discerning with the types of products you buy and consume.
