Hi Maureen, the butter can be cold or room temp, I recommend cold if it is hot inside, as the butter will quickly soften. If your kitchen is cold you can let it soften a bit at room temp before creaming it with the sweetener. These cookies can be more flat or not as much depending on how big and mound like you make them when putting them on the baking sheet.
