I just want to say that these are, by far, the best paleo chocolate chip cookies I’ve ever had. In fact, these may be the best chocolate chip cookies I’ve ever had period! And they were so easy! Hi Anne- thank you for trying them! Coconut sugar in very low glycemic so it’s much better for blood sugar than traditional sugar (of course), but even honey or maple syrup. I do understand that some people have to have sugar free though. I’m not familiar with stevia and I don’t think it converts 1:1. I have had good luck with Swerve sweetener which does evenly convert in recipes and I would suggest she tried that. It’s found in the baking aisle and of course on Amazon. Hope that helps!
The perfect cookie for a winter themed, “Frozen” themed or even a Christmas party. Kids love them, especially little girls that love the movie “Frozen”. They are made with only a few ingredients so they are pretty easy to make. I made mine by using a piping bag and a large star tip so you don’t need a cookie press unless you already have one or want to buy one. They are like a crisp butter cookie with almost a shortbread texture. The coconut palm sugar is the only sweetener that will achieve a crisp cookie. Thanks for the suggestions! We loved these so I plan to make another batch and I’ll experiment with the soda. I think I am just sensitive to that taste so pick it up, my husband didn’t at all. Today it was gone so that might be my answer to all things with soda, just wait overnight. Although that will be hard…I tend to try one or three as soon as they are cool enough to hold. When we go to the movies, I find myself always bringing healthier snacks. That’s probably not much of a surprise though. Every once in awhile we will splurge on the movie popcorn, but usually I have a purse packed with my favorite coconut oil and sea salt popcorn plus a few of these paleo chocolate chip cookies. Guys, they are RIDICULOUSLY GOOD. Think addicting, thick, chewy and full of melted dark chocolate puddles.

Hey Nichole! I do not recommend using coconut flour as a substitute for almond flour. Coconut flour absorbs significantly more liquid than almond flour and your cookies would almost definitely turn out dry. If you cannot use Almond flour I’d recommend trying tapioca flour or an all-purpose gluten-free flour although I haven’t tested either option so I cannot guarantee results. Bob’s Red Mill makes an all-purpose paleo baking flour but I am not sure if it has nuts or not. You should be able to substitute sunflower butter but if they can eat cashews I’d more highly recommend cashew butter as a substitution!

Hi. I used 1/4 cup of molasses and 3/4 cup of erythritol. When I first tasted the cookie I thought it was a little bit too sweet, but now the taste seems perfect. With the erythritol and molasses in place of sugar, I can eat the cookie without a negative impact on my blood glucose. I am a type 1 diabetic and my husband is a type 2. I have just finished battling 7 years of abdominal tumors that I had 25 lbs of tumors removed from my body. Because of the removal of these, my body has been going through some adjustments. I am dumping magnesium and iron, and the doctors don’t know why, plus I have become constipated with the high doses of iron that I have to take, but then I take high doses of magnesium that causes bouts where I need to be near a bathroom. Talking to a nutritionist and my doctors, a change in diet has been recommended. They both brought up a modified Paleo or Keto diet. My nutritionist wants me to eat there foods for sure everyday, pearl barley cooked in bone broth (homemade of course), greens ( cooked kale, collards, turnips, mustards, etc) and fish. The barley is to help with fiber and magnesium, and the greens for fiber and magnesium and iron. Will adding a cup of cooked barley make a bad difference in either of these diets, or will that amount everyday throw off all good effects of this diet? I am so tired of taking synthetic solutions for my problem. I am on excellent pre and pro-biotics and have seen great results from those. But getting this diet thing straightened out to help with my dumping of essential minerals is driving me coo-koo!

I don’t like keeping track of how much I’ve eaten or obsessing over how many grams of a particular nutrient I’ve had. Not only do I hate counting calories, but I know that calories are really only half of the battle, as they’re not all created equal – 400 calories of Doritos do NOT have the same effect on your body as 400 calories of high-quality vegetables and protein.
Been on a keto diet for two months now, I have a ravenous sweet tooth thanks to my Scottish Gma. Tried several low carb cookies, treats and all were ok to failure. This recipe is a KEEPER!! I’m sooooo glad I came across this recipe. This is one to pass down as a family recipe. I did not put molasses in but mine did not flatten out, I pressed them round after the first batch. Most likely the detrimental effects of grain, legumes and milk have afflicted humans throughout antiquity but until about 80 years ago death rate was so high and lifespan so short (comparatively) that these “minor” digestive setbacks would have been ignored. If a child in the 5000 years did not thrive it’s not likely that anyone would have been able to comprehend that “staples” such as wheat and milk could possibly be the problem. Even with Celiac’s it wasn’t until Germany’s wheat restriction to Holland in WWII that the gluten problem was fleshed out… After 10 000 years of wheat consumption… and no it’s not the Frankenwheats etc… fundamentally grains and legumes don’t want to be eaten, They are the seeds for the next cycle of the plant species.
