I am a type 1 diabetic and my husband is a type 2. I have just finished battling 7 years of abdominal tumors that I had 25 lbs of tumors removed from my body. Because of the removal of these, my body has been going through some adjustments. I am dumping magnesium and iron, and the doctors don’t know why, plus I have become constipated with the high doses of iron that I have to take, but then I take high doses of magnesium that causes bouts where I need to be near a bathroom. Talking to a nutritionist and my doctors, a change in diet has been recommended. They both brought up a modified Paleo or Keto diet. My nutritionist wants me to eat there foods for sure everyday, pearl barley cooked in bone broth (homemade of course), greens ( cooked kale, collards, turnips, mustards, etc) and fish. The barley is to help with fiber and magnesium, and the greens for fiber and magnesium and iron. Will adding a cup of cooked barley make a bad difference in either of these diets, or will that amount everyday throw off all good effects of this diet? I am so tired of taking synthetic solutions for my problem. I am on excellent pre and pro-biotics and have seen great results from those. But getting this diet thing straightened out to help with my dumping of essential minerals is driving me coo-koo!

Sounds like a drag to me. Dairy is healthy and really has no alternative. Over consumption is the issue. My life without dairy would be bland, tasteless and thoroughly boring. I raised five children on a dairy predominant diet and they are extremely healthy adults. NOTHING tastes better or is as satisfying as real butter, it’s natural especially if you buy organic. Sorry, but I disagree with most of your theories.

Delicious – followed the recipe exactly only mine did not go down flat. Perhaps the nut butter was a bit dry? Anyhow, when I checked on the first tray they were still very perky and round so I quickly smooshed them with a fork and they were a bit cracked but held together well and were tasty. For the second batch, pressed them first with a fork and they puffed up nicely leaving classic peanut butter cookie marks. Will definitely make again.
I just made these for the second time and they were even better!!! I sifted the almond meal/flower and chopped pecans and chocolate chips . .wow. . .they are so so good! A new trick is to measure out the honey in the same tablespoon you just did the coconut oil as it will slide right on out! I doubled the recipe and it made 12 nice size cookies .. next time I’ll triple . .everyone I’ve shared with love them and even my hubby who doesn’t eat my type of Paleo-style of eatin’ .. good eats peeps!

Where do I get a complete list of foods I can eat with Paleo diet? Naturally, I am a skinny person. With this diet, I lost way more than I want. Please, help me how I can gain some weight without grains and starch? I don’t think it is good to eat more than a few fruits a day because of fructose and according to the Paleo answer book, nuts, beef and sea foods have high AGE level, but I still eat fish especially salmon and lamb.
Amanda -I haven’t ever tried them with less baking soda, but you might be able to give it a try. Baking soda often helps cookies spread (baking powder often “puffs,” baking soda often “spreads”), so you’d probably have some spread differences. If they spread too much, you can head this off by adding an additional 1-2 Tbsp of flour to the batter. If they don’t spread, you might be able to use less flour to offset the problem. Again, I don’t know for sure since I haven’t tested them with less baking soda, but I’d love to know what you think if you give them a try. Coconut flour is not interchangeable with almond. It absorbs a TON of liquid so the ratios would be quite different as well as the texture. Coconut flour tends to be chalky when used by itself so I would not suggest switching it out in this case. Also, I find coconut flour to be way more expensive than almond flour. Salsa is generally something that you can have on Paleo, you’ll just want to check the ingredients list to make sure that they haven’t added anything that’s not allowed. If you buy organic salsa you should be fine. In this recipe they’ve gone with fire roasted tomatoes, which will pack a bit of heat with them. They’re also using hot green chiles which will get your attention, and which might make this a no-go for those that don’t like their salsa too spicy. Hey Nichole! I do not recommend using coconut flour as a substitute for almond flour. Coconut flour absorbs significantly more liquid than almond flour and your cookies would almost definitely turn out dry. If you cannot use Almond flour I’d recommend trying tapioca flour or an all-purpose gluten-free flour although I haven’t tested either option so I cannot guarantee results. Bob’s Red Mill makes an all-purpose paleo baking flour but I am not sure if it has nuts or not. You should be able to substitute sunflower butter but if they can eat cashews I’d more highly recommend cashew butter as a substitution!

These skittles are made totally with fruit or vegetables and coconut butter. It’s the combination of the fruits and veggies that make them so good. The recipes for all 7 different flavors are included. The ingredients listed above for maroon consist of all the ingredients. The other colors only have the ingredients listed that are not included in the maroon variety. All you need is a good blender and a food dehydrator. Although I have dried fruits in the oven before. The oven is faster but necessarily better. Just turn it on the lowest heat possible. I put links to two different dehydrators because one is way more affordable than the other. I have the cheap one and it works fine. But if you think you might use it a lot it might be worth the investment to get the more expensive one. Since the skittles are dried they can be stored at room temperature for a long time. That makes them handy to keep in your purse or bag for a time. I’ve also been known to freeze. dried foods and they keep just fine for a really long time.

I tried these last night. OMG good thing I worked out hard beforehand….it only made 9 so 4 were gone before I stepped out for some shopping. Sunflower seed flour is a good replacement for almond flour if he can have seeds, and if you don’t mind it turning slightly green if you’re mixing it in with either baking soda or baking powder, I forget which one. It’s a 1:1 ratio too so you just measure out the same as it calls for with the almond flour. It’s not cheap to buy so I’d recommend learning how to make your own for a fraction of the cost.
I like these Paleo pumpkin chocolate chip cookies because they are full of pumpkin flavor, they are not too sweet and they have kind of a cakey texture. That’s what I expect from a pumpkin cookie. These are really good, I don’t want to brag but they are a lot better than the ones you buy from the store. Even those made in a bakery. They are actually pretty healthy too because they only have 1 tablespoon of oil in the whole batch and only 2 tablespoons of honey. I sweetened them up with a little applesauce too.
I have 9 Paleo snack recipes when you’re on the go so you can stay on track with minimal effort. These are good ideas for work, snacks at home, children’s snacks, and vacations. Sometimes eating on the Paleo diet can be kind of hard. Especially when you are traveling or always on the go. And extra EXTRA hard if you are traveling with kids AND doing the paleo diet. Whew! Not sure exactly how much it depends on whether it is all-purpose blend or bakable blend Pyure, but It would be somewhere between 1/3 cup and 2/3 cup. Leftover chicken or turkey breast, pork chop, burger, or any meat with avocado/guacamole/guacachoke* smeared on top. You can just roast a pound or two of any kind of meat in the oven for 13 minutes or so and then have all that meat for snacks and meals for the week. Sometimes we make 3-pound hams in our smoker, slice it up, put it in a glass container and then I can just grab a piece of ham when I want it. Any meat will do!
I have some ideas on to why cookies might be flat. When I measured the oil into the pan before melting it was easy to get a little too much in there, so I measured again after melting on the way to the bowl and sure enough there was a good tablespoon left melted in the pan. So make sure to remeasure after you melt the oil. Also baking soda does expire so if you aren’t using it a lot make sure the check the expiration date.
