These are really delicious. I agree they are better than the sugary floury traditional cookies! Even my 2.5 year old loves them. I used high quality butter and brown sugar style Sukrin gold for the sweetener, Lilly’s stevia-sweetened chocolate chips, and used walnuts instead of pecans. Did not use molasses. I was lucky enough to receive a preview copy of Elizabeth’s cookbook, and was instantly hooked by the straightforward, crave-worthy recipes. The recipes are simple yet precise, covering everything from Cinnamon Streusel Coffee Cake to fresh pasta dough. As the kids and I flipped through the pages, the very first recipe that leaped off the page was Elizabeth’s “The World’s Easiest Cookies.” With a name like that, how could I resist?
Sooooooo…. Here goes. This cookie took me, like, 5 seconds to make. Okay, more like 5 min, but really? 5 min? Why the hell not?! And let me tell you… These are the closest to the real thing that I’ve ever tried!! So yum!! These are perfection!! Chewy on the inside, lightly crispy on the outside, with a hint of almondy goodness from the almond meal and perfectly sweet with only 2tbsp of honey. I could cry for joy because you are right my sweet Gina, I would, and did eat the whole batch right away without guilt!!

We love nuts and they are decidedly paleo diet friendly. Be careful though, as cashews are high in fat and, for some reason, it’s incredibly easy to eat an entire jar of them in one sitting (that’s not just us, is it?). If you’re trying to lose weight, limit the amount of nuts you’re consuming. Otherwise, have at it. The paleo or primal lifestyle also promotes healthier living. Better sleeping habits. Stress reduction. Functional fitness and movement. Adequate sun exposure. Spending more time outdoors. Avoiding environmental toxins and so on. Above all, paleo is not a set of strict rules, it’s more of a framework that you can adapt based on your own goals, health, gender, age, location and current lifestyle. Get rid of the temptation – if you’re gonna go at this thing with a full head of steam, remove all the junk food from your house.  It’s going to take a few weeks for your body to adjust to burning fat instead of glucose, and you might want to eat poorly here and there. If there’s no food in your house to tempt you, it will be much easier to stay on target.

But not all dark chocolate meets Paleo snack standards. Look for unsweetened dark chocolate or baking chocolate with 80 percent or more cocoa. I’m back with another copy-cat recipe. I didn’t realize I was on a roll with them until I was editing these pictures and got thinking about the Paleo Brownie Brittle Bark and the Paleo Samoa Cookie Bars. <—- check them out if you haven’t already! These cookies are inspired by the peanut butter cookie with the peanut butter filling. I used almond butter instead, of course, and they came out so good. It’s kind of crazy how much they taste like peanut butter cookies. I do realize it’s a little ironic the my almond butter cookies are shaped like a peanut 😉 You don’t have to make them peanut shape if you don’t want. I’m sure they would work great as circle cookies as well.

To further the discussion, Marijuana is an intoxicant that is so much stronger since the 60s (the best buds were propagated for generations) that it seems to be ‘turning on’ schizophrenia- like symptoms for the unlucky few who carry those genes.  The psychosis goes away the first few times they quit, but eventually does not go away even if they quit.

Natural sweeteners like stevia and xylitol have been extensively studied and don’t impose health risks. Allulose and yacon syrup also appear to be safe according to research studies. Primal (and some paleo adherents’) cooking and baking incorporate them as well as small doses of monk fruit, coconut sugar, maple syrup and wild honey. That said, it’s best to let your taste buds adapt to the natural sweetness and flavor of whole foods. In a large bowl, place the almond flour, coconut flour, salt and baking soda, and whisk to combine well. Add the palm sugar, and whisk again to combine, working out any lumps in the sugar. Create a well in the center of the dry ingredients, and add the coconut oil, eggs and vanilla, mixing to combine after each addition. Refined sugar, processed foods and restaurants did not exist during this time in human history. Perhaps not surprisingly, some vegetables that we eat today were not around in the Paleolithic era. In fact, if you look at a detailed Paleo diet food list, you will see that some of the most popular vegetables consumed in today's society are "forbidden," or at least dramatically restricted.
Legumes – beans, lentils, chickpeas and so on. Cashews are not legumes! There are some debates over whether some legumes are safe to consume in moderation, if prepared properly (soaked for 12 hours and then cooked really well to remove the phytic acid and make them easier to digest).
