Hi Dave, sorry for your troubles! More likely than not, the problem is that your almond flour is too coarse. I’ve added a link in the recipe with the brand I recommend (Honeyville) – it’s blanched and very fine and acts much more similarly to a traditional wheat flour than some coarser almond flours/meals do. In the meantime, you could try baking the cookie dough you have in a pan to make blondies so it doesn’t go to waste. Hope it still tastes delicious! Happy New Year.

Just wanted to make sure you’re chilling the dough to make sure it’s very cold and also make sure your pan is cold. If I use two cookie sheets, I eat bwttwre results between batches rather than putting room temp dough on a warm cookie sheet. Take out when baked, the use parchment paper so you can quickly transfer the cookies on top of a cold granite counter top. That’s how mine come out perfect.

So grains aren‘t allowed in the paleo diet but seeds are allowed. Grains are seeds. Also I doubt whether the ancestors of Europeans ever ate bananas or sweet potatoes. Some people do have problems after eating dairy products and gluten and too many carbs and too much sugar especially. But eliminating foods just because they are fairly new to our diets doesn‘t make sense. Some new foods are much better tolerated than others. A low carb diet is good for decreasing insulin resistance and a paleo diet would most likely be a lower carb diet than a diet containing lots of grains and refined sugars. So a paleo diet may also be good for decreasing insulin resistance. But it might not be superior to a low grain and low refined sugar diet. There‘s a lot we don‘t know and there are individual differences in food tolerances. Personaly I‘m just experimenting to see what diet works best for me. Grains and sweet potatoes seem to make my health worse. But maybe smaller amounts of both would be ok.

These cookies are good. It’s the first “healthy” type of treat I’ve attempted to make. The only problem I ran into is they seem to be a little doughy in the middle after baking. Is this typical? I tried turning down the oven temp and baking the next batch longer but they seemed to turn out the same. There are a lot of errant assumptions with respect to our past. I cringe when I hear “cave man” I think historically only a very small number of humans would have lived in caves… but caves leave evidence behind much better than grasslands do. We probably lived in caves at similar rates to chimps and gorillas today–just a few percent of the population. Milk: Food for infants but not juveniles and adults… evolution gives infants lactase enzyme and casein (opioid-like proteins) to keep them feeding but likely also discourages the juveniles and adult mammals from feeding on milk since they could out compete the infant–enter necessary lactose intolerance and milk protein allergies/sensitivities for the adults of most mammal species (If the older members of the species drink the milk then baby dies and species goes extinct) Nature engineers a solution and consequently human milk is good for a human baby-not adult, bovine milk good for a bovine baby-not adult etc. This engineered solution then plays out it’s subtle consequences over the lifetime of the human that consumes the bovine secretion (even if they’re not lactose intolerant)

Get yourself a top round roast and slice it as thinly as you can (or get your butcher to do it). The best jerky is made with just a few ingredients (but everyone’s taste buds are different). You’ll want to combine coconut aminos, some spices, and coconut sugar (yes, it isn’t totally Paleo; you can use honey instead). If you want the flavor that liquid smoke imparts, feel free to add it in. Put all the ingredients into a bowl, throw in the meat, stir it around, cover it, and put it in your fridge for at least 12 hours.

This Caprese-style salad is a great Paleo snack when you have just-right produce or an abundance of basil to use up. You’ll substitute mozzarella for creamy avocado loaded on fresh tomato slices. Top each tomato with basil, drizzle with balsamic vinegar and oil and enjoy. This one is great to enjoy while sitting outdoors enjoying a hot summer night.
I have some ideas on to why cookies might be flat. When I measured the oil into the pan before melting it was easy to get a little too much in there, so I measured again after melting on the way to the bowl and sure enough there was a good tablespoon left melted in the pan. So make sure to remeasure after you melt the oil. Also baking soda does expire so if you aren’t using it a lot make sure the check the expiration date. The perfect cookie for a winter themed, “Frozen” themed or even a Christmas party. Kids love them, especially little girls that love the movie “Frozen”. They are made with only a few ingredients so they are pretty easy to make. I made mine by using a piping bag and a large star tip so you don’t need a cookie press unless you already have one or want to buy one. They are like a crisp butter cookie with almost a shortbread texture. The coconut palm sugar is the only sweetener that will achieve a crisp cookie. So don’t try to replace it with Honey or Maple Syrup.

Cooking and consuming seaweeds can be intimidating because they can seem quite bland, tough or bitter at first glance. With the proper seasonings and cooking though, they can become a real treat. I love this recipe! I’ve been trying to make healthier desserts, and this was spot on. I brought it to work, and everyone loved the cookies and asked for me to make some more. I only used 1/3 cup of Swerve, and used 1/4 cup walnuts instead of pecans. Mine didn’t spread out as flat as yours. I was only able to make 16 cookies, but I also scooped it out with a 1-1/2 inch cookie scoop. I used Kirkland semisweet chocolate morsels, since it needed to get used up, and added 1 tsp of Instant dark roast coffee to bring out the chocolate. It was lovely, and only topped out at 105 cals per cookie, with the ingredients I used. I wonder if it’d still be good if I used coconut oil instead of butter. Because the health benefits provided by various fruits does vary greatly, it’s best to eat a wide variety of types to take full advantage of their goodness. Preference should be given to fruits that are lower in carbs such as berries while fruits with a higher glycemic load like bananas and tropical fruits can be enjoyed occasionally. I’ve made these numerous times now after a friend recommended them, and they are fantastic!! I wouldn’t say they’re a healthy substitute to normal/traditional chocolate chip cookies because they’re not quite the same. Rather, I’d say these are in a different category: much more moist, rich with hints of coconut that do not overpower the cookie, and an excellent satiation for the carb- and sugar-wary sweet tooth. Be sure to at least double the recipe because 12 cookies will NOT be enough!
