I was lucky enough to receive a preview copy of Elizabeth’s cookbook, and was instantly hooked by the straightforward, crave-worthy recipes. The recipes are simple yet precise, covering everything from Cinnamon Streusel Coffee Cake to fresh pasta dough. As the kids and I flipped through the pages, the very first recipe that leaped off the page was Elizabeth’s “The World’s Easiest Cookies.” With a name like that, how could I resist?
Some people don’t understand humor and get their panties in a bunch when they read things that are meant to be fun. Not everything should be Martha Stewart (who also has a wild side if you’ve ever heard her as a guest on Howard Stern). I loved the post and the humor with which it was written. Too much is serious these days and too many people get offended by stuff.
If you’re looking for a fresh fruit alternative, look no further than fruit leathers or fruit strips. This product can be found at most pharmacies, grocery stores, and even gas stations, but be careful because not all fruit leathers are good Paleo snacks. Check the list of ingredients on the back of the box carefully before purchasing. Your healthier fruit leather options will be those will minimal ingredients, like fruit and water. Yeah I am frustrated too. I keep going to Paleo recipe sites on the web and many are using non paleo ingredients. Very confusing. Did someone reinvent the Paleo diet out there that everyone is following different guidelines? I want to try the baked avocado and egg with miso butter but then I find miso is soy. I did notice if you let them sit they did appear to have that same “look” however I also realized they are a softer cookie. I had a handful of people try them and all but one could not tell they were not your “typical” chocolate chip cookie. If I wouldn’t have told the one they were grain free/dairy free they would have been on board with the rest. I am very pleased with this recipe and although I commented on the issues I had, I would make these again and again! I was looking for a perfect Paleo snack and I think I may have found it. Ive made a cople of your desserts now and have been SO impressed!!!!! Thank you for these great recipes!! My husband eats Paleo so I wanted to test these out for him today. Between my parents and my 4 yr old son, they ate almost the whole batch!! My dad even loved them and he has been known to eat 6 crispy kremes in one sitting without thinking twice! 😉 I used our blendtec blender to grind some raw almonds into flour (hadn’t tried that before) and with that the cookies came out delicious!! The paleo chocolate chip cookie recipes, however, are usually either too cakey for my taste, or rely on a huge amount of almond butter/sunflower seed butter/peanut butter as the base, which can be pricey – and I’ve gotten dozens of emails from you guys, saying that a recipe that starts with half of a $14 jar of almond butter is not appealing to you. Me, neither.
Ideally, if you have a good Paleo breakfast and lunch, you’ll often find you don’t feel hungry and don’t need to snack. If you do find yourself hungry between meals, try eating more at meals (are you consuming enough satiating fat in your meals?). I’m sorry to hear these didn’t work out for you. I’m not sure what you mean by “the flour never became anything but crumbled powder.” Were you making your own almond flour, and the ground almonds didn’t become fluffy enough? Or do you mean that there wasn’t enough moisture for the cookies to hold together? I’ve made these cookies many times, and this ratio of maple syrup and coconut oil (or butter) has always produced a delicious result. You can always add additional coconut oil or maple syrup if the cookie dough doesn’t look like it will hold together. I hope you and your family have a Merry Christmas, regardless!
Dairy is a touchy subject. It’s widely considered a gray area in the Paleo community. Much of the world’s population cannot tolerate lactose, the sugar found in milk. Mass commercially-produced milk comes from industrially farmed cows, undesirable from both a health and ethical standpoint. That said, grass-fed and pasture-raised cows produce higher-quality milk. Fermented dairy, like yogurt and kefir, also offers the benefits of probiotics. If you choose to consume dairy, opt for the quality stuff. Otherwise, try additive-free nut and coconut milks.
The hypocritical nature of this diet is out of control. I get it, grains do make people fat. That’s why in a natural cycle they appear at the end of summer and let animals fatten up for the winter. But to rule out foods simply because our ancestors did not eat them is ridiculous. By this rule tomatoes, squash, peppers, avocados, quinoa, and let’s not forget COFFEE and CHOCOLATE were not around during the evolutionary period because they are all new world foods and humans did not make they’re way over here until much later (and anyone of European decent only the last couple hundred years). This is an Atkins diet, plain and simple, repackaged for the modern age. Don’t get me wrong- I totally believe it’s a better way of eating, but the pitch is just ridiculous. Our ancestors also did not use cell phones, drive cars, and use complicated medical technology that has lengthened the lifespan of human 4-5 times the years they lived.
This chipotle-infused dip is going to be spicy, but not so spicy that your eyes water. It’s balanced out by the butternut squash, which has a nice calming effect on the taste buds. There’s also thyme, cinnamon, and chili powder adding to the mix of flavors here, making this a multidimensional dip that is great for carrot sticks, raw broccoli pieces, strips of bell pepper, or any of the chip recipes found on this page. Amanda -I haven’t ever tried them with less baking soda, but you might be able to give it a try. Baking soda often helps cookies spread (baking powder often “puffs,” baking soda often “spreads”), so you’d probably have some spread differences. If they spread too much, you can head this off by adding an additional 1-2 Tbsp of flour to the batter. If they don’t spread, you might be able to use less flour to offset the problem. Again, I don’t know for sure since I haven’t tested them with less baking soda, but I’d love to know what you think if you give them a try. I am on a paleo food closed group on FB and while its been great recently they have been posting recipes that use cassava and tapioca flour. When I tell them that’s not paleo, I get shot down by others saying that its allowed, or others who are AIP, use it all the time and that its paleo. I have directed them to Dr. Cordain’s website to point out that those items are not on the paleo diet but its caused a bit of a flame war on there now. Any help would be appreciated. also as a type 2 diabetic who is hyperglycemic I have been on the paleo diet for 2 months. I have lost 17 lbs and my blood sugar has gone down from a fasting level of 277 to a normal waking level of 135-150. I can’t have any fruits since anything causes sugar spike that lasts for almost the whole day and no sweet potatoes, which sucks majorly either way. So its veggies and meat primarily. Any suggestions to not get into a funk or boredom with food day in and out?? thank you for your time in reading my reply.
