We love nuts and they are decidedly paleo diet friendly. Be careful though, as cashews are high in fat and, for some reason, it’s incredibly easy to eat an entire jar of them in one sitting (that’s not just us, is it?). If you’re trying to lose weight, limit the amount of nuts you’re consuming. Otherwise, have at it. I mean, you can’t beat a good almond/pecan/walnut mix, can you?

I have tried several low carb or paleo chocolate chip recipes. Made these last night, used half erythritol and half coconut palm sugar. I may have baked 1 min. longer, they came out crispy. But they tasted great and I love crispy cookies anyway, but next time I will bake according to the instructions. So far, these are the bet CC cookie recipe I have made since eliminating wheat, grains and sugar from my diet over 2 years ago.

I finally kicked my dairy “habit” & have never felt better in my 63 years on this earth! I grew up in the dairy industry & in an era where everyone was expected to eat what they were told was good for them. Think about what cow’s milk is meant to do. You’re likely having these negative reactions to wheat products, which hide in many different pre-made foods, especially vegetarian foods. Try reducing the number of different ingredients you consume on a daily basis. For example, eat whole fruits and veggies you bought and chopped up yourself, raw nuts (not legumes), organic eggs, and don’t be afraid to try eating free range chicken breasts and grass fed cow meat for a 30 day health experiment. Use healthy oils like olive oil or coconut oil to cook meat and make salad dressings. Hey Nichole! I do not recommend using coconut flour as a substitute for almond flour. Coconut flour absorbs significantly more liquid than almond flour and your cookies would almost definitely turn out dry. If you cannot use Almond flour I’d recommend trying tapioca flour or an all-purpose gluten-free flour although I haven’t tested either option so I cannot guarantee results. Bob’s Red Mill makes an all-purpose paleo baking flour but I am not sure if it has nuts or not. You should be able to substitute sunflower butter but if they can eat cashews I’d more highly recommend cashew butter as a substitution! https://www.youtube.com/watch?v=5iMM4Cx_bKk

I like these Paleo pumpkin chocolate chip cookies because they are full of pumpkin flavor, they are not too sweet and they have kind of a cakey texture. That’s what I expect from a pumpkin cookie. These are really good, I don’t want to brag but they are a lot better than the ones you buy from the store. Even those made in a bakery. They are actually pretty healthy too because they only have 1 tablespoon of oil in the whole batch and only 2 tablespoons of honey. I sweetened them up with a little applesauce too.
These cookies were amazing!!! SO good!!!! I followed exactly using the amount of Swerve you suggested…and instead of the molasses I used 1 Tbs of Splenda brown sugar. When they had been cooking for 14 min I used a spatula and flattened them a bit in the oven and then continued to cook until browned. I have some ideas on to why cookies might be flat. When I measured the oil into the pan before melting it was easy to get a little too much in there, so I measured again after melting on the way to the bowl and sure enough there was a good tablespoon left melted in the pan. So make sure to remeasure after you melt the oil. Also baking soda does expire so if you aren’t using it a lot make sure the check the expiration date. Just like us, our ancestors couldn’t resist the smell of roasting pork so it’s also on the paleo menu.
