Oh, wow. These are GOOD. I made them exactly as is. First, I couldn’t stop eating the dough (which is bad because I’m pregnant and there is raw egg). I just had my first one and I am going back for another. Love how these are healthy to help keep my pregnancy weight gain in check, but also totally craving satisfying! Sunflower seed flour is a good replacement for almond flour if he can have seeds, and if you don’t mind it turning slightly green if you’re mixing it in with either baking soda or baking powder, I forget which one. It’s a 1:1 ratio too so you just measure out the same as it calls for with the almond flour. It’s not cheap to buy so I’d recommend learning how to make your own for a fraction of the cost.
If you follow a grain-free diet, you'll want to make your own grain-free baking powder or order a specialty version online because most commercial baking powders contain a grain-based starch, usually cornstarch, to prevent clumping. If you don't follow a grain-free diet, use whatever baking powder you have on hand. (As long as it's fresh, of course.)
I know this will defeat the whole Paleo point but wanted to say I made these to suit my tastes by subbing the honey with pure grade b maple syrup, adding 1/4 cup natural peanut butter (containing only peanuts and salt) and 1 large egg. The results were AMAZING! They are light yet chewy and hold their shape beautifully. Thank you for such a great recipe!

Because the health benefits provided by various fruits does vary greatly, it’s best to eat a wide variety of types to take full advantage of their goodness. Preference should be given to fruits that are lower in carbs such as berries while fruits with a higher glycemic load like bananas and tropical fruits can be enjoyed occasionally. Made them last night, melted the honey to make it measure better, and then the cookies spread (but not awfully bad, we ate them with a spoon). This morning, I baked up the last 3-4 cookies and they came out exactly as described. I can only assume having the coconut oil and honey at room temp helped, next time I’ll make the dough and let it rest for a bit before I bake’em up.
