I love all your paleo recipes but am not a friend of the texture/flavor eggs add ( I know it’s not super obvious and noticeable but I generally bake vegan treats so do tend to notice a difference) Your double chocolate paleo bars worked super well with a chia egg (I ate those bars every chance I got!), do you think that would work here too? If you’re constantly craving chocolate, you might be deficient in magnesium. Alice, I’m sorry you weren’t pleased with this recipe. Assuming you didn’t omit or substitute any other ingredients, I imagine it’s due to your almond flour brand—although “cardboard” is hard to imagine unless maybe you left out the sugar? Almond flours are not all created equal and finely-sifted is definitely not the same as finely ground, which is why I specify. Alcohol can pump up people but not by being a stimulant. I’m back with another copy-cat recipe. I didn’t realize I was on a roll with them until I was editing these pictures and got thinking about the Paleo Brownie Brittle Bark and the Paleo Samoa Cookie Bars. <—- check them out if you haven’t already! These cookies are inspired by the peanut butter cookie with the peanut butter filling. I used almond butter instead, of course, and they came out so good. It’s kind of crazy how much they taste like peanut butter cookies. I do realize it’s a little ironic the my almond butter cookies are shaped like a peanut 😉 You don’t have to make them peanut shape if you don’t want. I’m sure they would work great as circle cookies as well.

Now, there are lots of people who feel iffy about snacking. And I get that. The snacks many of us were brought up and traditionally reach for (animal crackers, pretzels, cheese flavored crackers) are kind of just filling up the belly instead of actually feeding the body what it is actually asking for...which is nutrients and protein! I made these for a weekend class, I used butter instead of coconut oil but otherwise followed the recipe as is. My recipe only made 16 cookies, not 24 and perhaps I ate a couple before they got to the class :) Anyway, I was so surprised when I had about 12 of the women come up to me to tell me how great they were. Mind you, it’s not a group that knows me except by name. I have never had such a big response to a recipe before. Will be making them for the class again next weekend and doubling the recipe. We made these this afternoon and they were great! My husband is fond of mint with chocolate so instead of chocolate pieces or chips, we used Andes Mints pieces which I have only found at Walmart. We used a 1″ cookie scoop and came out with 30+ cookies. We wanted them a little more crisp, so we cooked them longer than the recipe’s 10 minutes. We did use the Honeyville almond flour which we always have good luck with. Thanks, Rachel–keep on keepin’ on!

I think granola bars are pretty healthy so my kids and I eat them for snacks all the time. They aren’t just for breakfast anymore. These granola bars come together quickly and are so easy to make. Chopping the nuts is the most time-consuming part and you probably know that isn’t very hard. You can use whatever nuts you like or have on hand. You can forget the chocolate if you’d like.
I just made these cookies-made a couple of changes because ithese were the ingredients I had on hand but they still came out great-thick but airy, better than any store bought. I substituted little less than half the almond flour for oat fiber. Used jumbo eggs and 1/8 teaspoon more vanilla. Swerve powdered not granular, and 100 percent cocoa bakers chocolate. The number of things that modern day cooks can do to vegetables is growing, and they’re coming up with new ways to make eating vegetables fun and desirable.
