Yes, I’ve used half coconut flour. Still in the oven but they tasted good before I put them in! I also found them too crumbly the first time I made them, so I added a flax egg and half a cup of almond milk and then squeezed them into balls and flattened them. Much better consistency. And I find they need to bake 2-3 minutes longer, maybe even a bit more.
This step is actually optional if you do not mind having flecks of zucchini visible in your zucchini cookies! However, in my house, my kids would not approve of anything green in their cookies, so I always blend the zucchini with the other wet ingredients! I also really enjoy the texture of these paleo breakfast cookies when the zucchini is fully blended.

Yes, I did it right. Only 3 ingredients. Are you like some people and just pass up plantains in the grocery store? I used to be like that. I didn’t even know what they were. They looked weird and terrible. I don’t think like that anymore since I’ve gotten to know them. You can either choose them when they are on the yellow side or the green color side. The only difference is that the yellow ones are riper and therefore sweeter. The green ones are less ripe and won’t taste as sweet. That choice is just up to your preference. The yellow ones are a little harder to work with because they are more sticky. I do recommend green but you should experiment and have fun. Don’t worry about the skin being brown and a little bruised. The skin on plantains is really thick so the fruit is more protected than with a banana.

Hi, Susan! I linked to Thrive Market under the Siete amazon link. That’s the only other online place I get them or I purchase them from Whole Foods! They’re cheaper on Thrive Market than they are at Whole Foods unless you can find them on sale at the store. You can also purchase them through the siete website directly, however I’m unsure what the price and shipping is! They’re so good though! If you haven’t tried the tortillas yet, I’d recommend getting the almond flour ones first. They’ve seemed to hold up better (more sturdy) than the coconut ones if you have wet/heavy ingredients in your taco 🙂

These cashew butter balls are made raw so you don’t have to bake them. They’re ready to eat after just an hour in the fridge. The good thing is that you can make many of them at once, and just eat them a bit at a time as you go through your week. I have been following the paleo diet for about 2 weeks now. The first week i did gain weight , but it was my body bloating. it was in complete shock of the drastic change i made. So iv been baking Paleo goodies for some time now and have had some good successes with my own recipes.. though i was nervous about attempting cookies. My boyfriend LOVES cookies.. but usually forces himself to refrain until special occasions due to being health conscious. I wanted to make him something that he could enjoy and that wouldnt “taste healthy” as a lot of paleo baked goods do.
This recipe was the hands down winner. It was contestant “D” of A-D. My husband had decided on B, I think, until he tried these and he declared this recipe the winner on the spot. I tried them and agreed. I now feel sick from trying all of these cookies, but I can give this recipe the thumbs up all around from my household! I have been staring at this recipe for about two months. I decided to make them today so I’d stop eating the chocolate and not have enough for the cookies…. again. We have a penchant for finding an absurd amount of ways to sweeten our food, as evidenced by our sweetener-laden grocery store aisles. Our many sweeteners also have many names, making it difficult to suss out the added sugars in foods. There are only a few Paleo-friendly sweetening agents: fruit, raw honey, pure maple syrup, and coconut sugar, all of which are low on the glycemic index. Still, these should not be a diet staple.

It doesn’t matter if you’re Paleo or not — you’re going to want to make these nachos! You’ll start with homemade sweet potato chips, then load ’em up with shredded chicken, pico de gallo and chilies. But the star of this dish is the avocado sauce. It’s your cheese stand-in but trust me, you’re going to want to eat it all the time. Wow, these look fantastic…definitely need to make these! I had bad cravings last night and I solved with almonds and raisins, plus a little coconut butter. Probably too many of each of these but it tasted good! I like these Paleo pumpkin chocolate chip cookies because they are full of pumpkin flavor, they are not too sweet and they have kind of a cakey texture. That’s what I expect from a pumpkin cookie. These are really good, I don’t want to brag but they are a lot better than the ones you buy from the store. Even those made in a bakery. They are actually pretty healthy too because they only have 1 tablespoon of oil in the whole batch and only 2 tablespoons of honey. I sweetened them up with a little applesauce too.

I am a type 1 diabetic and my husband is a type 2. I have just finished battling 7 years of abdominal tumors that I had 25 lbs of tumors removed from my body. Because of the removal of these, my body has been going through some adjustments. I am dumping magnesium and iron, and the doctors don’t know why, plus I have become constipated with the high doses of iron that I have to take, but then I take high doses of magnesium that causes bouts where I need to be near a bathroom. Talking to a nutritionist and my doctors, a change in diet has been recommended. They both brought up a modified Paleo or Keto diet. My nutritionist wants me to eat there foods for sure everyday, pearl barley cooked in bone broth (homemade of course), greens ( cooked kale, collards, turnips, mustards, etc) and fish. The barley is to help with fiber and magnesium, and the greens for fiber and magnesium and iron. Will adding a cup of cooked barley make a bad difference in either of these diets, or will that amount everyday throw off all good effects of this diet? I am so tired of taking synthetic solutions for my problem. I am on excellent pre and pro-biotics and have seen great results from those. But getting this diet thing straightened out to help with my dumping of essential minerals is driving me coo-koo!

Banana peppers are really great because they give you a bit of spice but not so much as to be overpowering. When you stuff them with salami you are pretty much getting equal parts meat and vegetable, making this very Paleo. But they didn’t stop there, they stuffed the salami with avocado, so you’re getting a huge nutrition boost as well as a third texture to make this really nice on the palate. The avocado will provide you with a good dose of potassium, as well as fiber to help with digestion. A fine snack choice that will easily get you to your next meal.

Haha, i agree! Wine is definitely Paleo! Naturally there is Alcohol in Fruits and Berries when they’re Ripe! In some cultures, they chew on Berries, and spit them out in a bowl of Water, and let it ferment… Alcohol gets bitched more at than most things, but the body still see’s Sugar as a worse enemy, which is why it tries to get rid of the Sugar first… That is afterall, the main reason, why you get easier drunk, if you mix your booze with a Sugar Free Soda or just Water, compared to a regular Soda, Juice etc.

This sounds great. And sorry if this has already been asked but the Ghiradelli make dairy-free, soy-free chocolate chips? I am completely dairy/soy free and struggle to find the right chocolate (especially since I live in German). I used to buy Enjoy Life, but can’t get that brand shipped here. But if Ghiradelli is dairy free I’ll have to explore that realm. Thanks!
I’m a type 1 diabetic who started following the paleo but removed the fruit and high GI vegetables. I had a A1C of 7.5 – its now 5% so better than the majority of the population. The good news is that if you get it this low then a lot of the damage caused previously is repaired by the body in a few years. Rashid – check out my comment below (about the Tanka Bars – the spicy one that I like only has about 250mg or 11%DV – which isn’t too bad for “jerky” type snacks. Low fat and pretty low calorie too). Thank you so much for this amazing recipe! My 5 year old son eats Paleo for medical reasons and he’s been going crazy for a cookie! I’ve made some other paleo sweets, none of which have been well received. He was so excited to help me make them and even more excited to help eat them! He ate 2 after they cooled and is already asking for another after dinner. My 7 year old, extremely picky daughter also loved them.
