Also the other reply mentioning the different forms of iron and magnesium is excellent advice. Most over the counter iron is not only hard on the digestive system, but also does not absorb well anyway. I believe there are three if not four different kinds. In regards to the barley not being ‘paleo’, does it really matter? If you are following a paleo diet for medical purposes and the barley aids and does not hinder your health, then THAT is part of YOUR diet, regardless of whether it’s proper paleo or not. These cookies are good. It’s the first “healthy” type of treat I’ve attempted to make. The only problem I ran into is they seem to be a little doughy in the middle after baking. Is this typical? I tried turning down the oven temp and baking the next batch longer but they seemed to turn out the same. Hi Maureen, the butter can be cold or room temp, I recommend cold if it is hot inside, as the butter will quickly soften. If your kitchen is cold you can let it soften a bit at room temp before creaming it with the sweetener. These cookies can be more flat or not as much depending on how big and mound like you make them when putting them on the baking sheet. I find using a cookie scoop helps with this & makes them more uniform. I hope this helps. Grain free cookies can be so finicky sometimes 😉

I have started this diet based on “Paleo Diet for Athletes”. I am 193 lbs as of right now but at my fittest (before hip surgery last year) I was a lean 175 and wish to get back around that weight. I do crossfit 4-5 times per week with accessory work at home. The macros I follow every day are 175 protein/89 Fat/125 carbs. Do you feel these are the correct macros for my goal?
Amanda -I haven’t ever tried them with less baking soda, but you might be able to give it a try. Baking soda often helps cookies spread (baking powder often “puffs,” baking soda often “spreads”), so you’d probably have some spread differences. If they spread too much, you can head this off by adding an additional 1-2 Tbsp of flour to the batter. If they don’t spread, you might be able to use less flour to offset the problem. Again, I don’t know for sure since I haven’t tested them with less baking soda, but I’d love to know what you think if you give them a try. The crispy edges don't last forever. These cookies are best within a few hours of baking; once you store them in an airtight container overnight, the moisture redistributes and produces a softer, cake-ier cookie. To compensate, add a few minutes of bake time or store them in the fridge after the first day. After about the 5th day, transfer them to the freezer. 
I have tried several low carb or paleo chocolate chip recipes. Made these last night, used half erythritol and half coconut palm sugar. I may have baked 1 min. longer, they came out crispy. But they tasted great and I love crispy cookies anyway, but next time I will bake according to the instructions. So far, these are the bet CC cookie recipe I have made since eliminating wheat, grains and sugar from my diet over 2 years ago.

Sorry for just now seeing this! You’re the first person in about 600 reviews to say that they didn’t come out well so something definitely went wrong. Did you maybe pack your almond flour very full? I’d recommend going by weight. If you didn’t, I recommend trying again because every now and then, I accidentally leave an ingredient out of a recipe when baking and don’t realize until later. I know it’s probably not the answer you were looking for but it’s the only thing I can think of if you didn’t make any changes at all to the recipe.

I just made these cookies, and like several other people, I ended up with flat pancakes–very oily. I could tell based on your description of scooping the batter and pressing down to form half circles and then tapping the batter out, etc., that the consistency was wrong even before I baked them. I have some ideas on to why cookies might be flat. When I measured the oil into the pan before melting it was easy to get a little too much in there, so I measured again after melting on the way to the bowl and sure enough there was a good tablespoon left melted in the pan. So make sure to remeasure after you melt the oil. Also baking soda does expire so if you aren’t using it a lot make sure the check the expiration date. If it’s too old it won’t work!
Haha, i agree! Wine is definitely Paleo! Naturally there is Alcohol in Fruits and Berries when they’re Ripe! In some cultures, they chew on Berries, and spit them out in a bowl of Water, and let it ferment… Alcohol gets bitched more at than most things, but the body still see’s Sugar as a worse enemy, which is why it tries to get rid of the Sugar first… That is afterall, the main reason, why you get easier drunk, if you mix your booze with a Sugar Free Soda or just Water, compared to a regular Soda, Juice etc.
I’ve somehow managed to keep baking, and blogging, and photographing, and writing, through every year and step of college. You’re likely having these negative reactions to wheat products, which hide in many different pre-made foods, especially vegetarian foods. Try reducing the number of different ingredients you consume on a daily basis. For example, eat whole fruits and veggies you bought and chopped up yourself, raw nuts (not legumes), organic eggs, and don’t be afraid to try eating free range chicken breasts and grass fed cow meat for a 30 day health experiment. Use healthy oils like olive oil or coconut oil to cook meat and make salad dressings. We’ve made these a couple times now and the 2nd time they were amazing!! The first time, I tasked my daughter, a self-proclaimed baker, with making them. We didn’t have any eggs in the house so I made an egg replacement using flax/water. She thought she was using parchment paper but actually used wax paper to line the pan. OOPS!! So the 1st batch were a flop. Definitely stick with making them SMALL!! She opted for large cookies and they spread out to cover almost the entire cookie sheet. So the next time, I made them myself with an egg, parchment paper, and kept them small. Like I said, they were amazing!! I’m low carving, so I used Xylitol as my sweetener and didn’t use quite as much as the recipe called for simply because I prefer things a little less sweet these days–I’m turning into my Grandma! When I was in my teens she suggested not adding as much sugar as recipes called for (Grandpa was diabetic at that point) and I thought she was crazy. Now I’m in my 40s and my taste buds have totally changed. But anyway! Thanks so much for a delicious recipe! They definitely hit the sweet spot of my craving!

Hello, a change in diet, eating lower amounts of carbs, and sugars can certainly help the mechanisms, also it should be noted that it is important a back be healthy as well, because the back being the sympathetic, and parasympathetic system controls these functions. So a massage just above the tail bone, as well as strengthening, and alignment can help. (A majority of misalignment, or inflammation is not felt) One should also not underestimate how our bodies are absorbing the foods we eat, and so it is important to use a digestive enzyme (not a cheap one) and a microprobiotic, to try and help balance the system better. I have enough information to write a book on this question alone, however, I hope the straightforwardness of the answer will help 🙂

Dairy is something of a contentious food group, even within the paleo community. I recommend you read the books “Wheat Belly” or “Brain Grain” for the science behind these arguments. Neither are paleo books, and in fact barely mention them, but they both discuss the benefits of low carb, low wheat/gluten diets through personal testimonies and are actually really enjoyable! The former is written by a cardiologist and the latter by a neurosurgeon. I think the term “diet” for Paleo is silly because how you choose to eat healthy should just naturally become part of your lifestyle and not be considered a diet at all. As for the humanitarian and health issues (water and insects too) mentioned by Christopher, these will always be issues with any type of food we eat.
If you’re feeling more adventuresome, though, and are willing to try some additional flours, I humbly recommend the holy grail of chocolate chippers: the New York Times-style gluten free chocolate chip cookies. They not only have a couple extra ingredients, but they must chill in the refrigerator before baking. I did notice if you let them sit they did appear to have that same “look” however I also realized they are a softer cookie. I had a handful of people try them and all but one could not tell they were not your “typical” chocolate chip cookie. If I wouldn’t have told the one they were grain free/dairy free they would have been on board with the rest. I am very pleased with this recipe and although I commented on the issues I had, I would make these again and again! I was looking for a perfect Paleo snack and I think I may have found it. Here’s a trail mix that will definitely sustain you for long periods of time, whether actually on a trail or stuck in a cubicle. You can munch on this mix of nuts, seeds, fruit, and coconut, and they’ve even included a little something sweet in the form of chocolate chips. wonderful recipe! The only change was I subbed 1/3 c of splenda brown sugar baking blend for 1/3 of the swerve. (since I didn’t have molasses) They have a great taste and texture. my 14 yr old daughter that is doing Low carb with me loved them! I used sugar free mini chocolate chips from our local Amish Store. But critics argue that the unlimited amount of red meat the paleo diet allows may have an adverse effect on heart health in people with diabetes, as research links eating red meat in excess to poor heart health. (11)  If you have diabetes and don’t moderate your red-meat intake, this could be a big problem, as people with diabetes are 2 times as likely to die of heart disease as people who do not have diabetes. I am also allergic to corn. I have had food allergies my entire life, the severity and type has consistently been inconsistent! E.g. Sometimes an allergy will go away and resurface years later, sometimes new ones develop, etc. Last year I had many unexplained symptoms that my regular doc had no explanation for–swollen lymph nodes in armpits, GI issues (severe gas and lots of noise from tummy), extreme lethargy and tiring easily, fuzzy thinking, inability to concentrate, anxiety and *maybe* depression (or were symptoms causing depression?!). I felt really awful. I saw an alternative doc (with an MD) who recommended I avoid cereal grains, all dairy from any source (eggs ok), and CORN, among a few other things that I already avoided such as sulfites, most nuts (childhood peanut allergy). I had already been avoiding corn and corn products such as corn starch & MSG (at the time I didn’t know this had corn in it but I knew it had the potential to make me feel weird); She gave me an much more comprehensive list that was extremely helpful. My conclusion is the vast majority of additives may or may not have a corn component so it is best to avoid them altogether. (This is not an issue outside of US (for obvious reasons) but IMO corn should treated as in everything–xanthan gum, natural flavors, citric acid, hydrolyzed vegetable protein, regular salt (versus sea salt), to name a few off the top of my head. One of the biggest surprises and bummers for me was white vinegar which I had been using for cleaning and as a hair rinse because of my allergic reaction (hives, swollen gums, itchiness, dandruff, eczema) to most products. Due to my inability to identify a common element that I was reacting to I practiced avoidance and/or used vinegar and a few other safe products. However, I had discovered that white vinegar often has a corn ingredient! Bah! (Importantly though, I finally figured out what allergen my cleaning/beauty products had in common–CORN!–and clearly my white vinegar reaction was extremely mild comparatively. It all finally made sense: for example I had finally identified sodium laurel sulfate as an allergen and that is in many things–turns out it is made from corn. But, I wasn’t only allergic to SLS. “All Natural” “organic” were meaningless allergy-wise. So since my food allergies have bloomed, I have stopped using white vinegar and replaced with Apple Cider vinegar. Anyway, corn is tough. To get to the point though: I was told that I need only be concerned about “corn feed” for beef and that other animals because they were smaller and have less fat are ok. This seemed a little weird to me but as I have followed the diet it seems to be true. I wanted to post and answer to your question and let you know how hard it is to be allergic to corn. I have been strictly avoiding it in all its manifestations and feel much better. So dairy and grains seem to be “intolerances” for me, but I am not sure I buy that whole differentiation. Corn has given me hives in the past, now it only gives me stomach ache and affects mood. So has it changed from an allergy to an intolerance? I think ultimately they are all allergies whether there is a strict histamine reaction or not. Clearly more scientific work needs to be done in this area with more and more people claiming to suffer from allergies and intolerances. Corn isn’t even listed as a potential allergen in packaging so that makes it really tough, especially since it is often deeply disguised. ANYWAY, today when I was shopping I realized that this whole paleo thing that has been in my peripheral vision may be a great guide for me with a few modifications!
