Some aspects of this diet sound good and logical but, How does anyone know that prehistoric homosapiens were at all “healthy”? Maybe the life span of Cro magnon was so short because of poor diet and extreme physical labor. Has anyone seen long term proof of such a basic intake? Don’t misunderstand me, I think the chemistry we’ve developed and added to our foods can’t be good but, I can’t help wonder if finding a balance in what we eat is better than eliminating foods that we can process and use. Broken down to a basic form of existence, all life has the same properties of nutrition and survival of the species. Whether it’s milk from a coconut or milk from a goat, it has the same purpose, just a different presentation. I think this diet is a good start to eating less processed foods, which to me seems more important than eliminating milk from a different animal than ourselves. Maybe the unnatural way we produce milk from cows has more to do with lactose intolerance than the essence of that product. Maybe genetic modifications of grains have led to gluten intolerance. The life span of humans has certainly increased. Maybe not treating our food with growth enhancement or pesticides would be the answer to allowing us to consume some foods that are emerging as not inherently good for us. Just a few ideas to ponder. I’m going for another cup of organic coffee. https://www.youtube.com/watch?v=XyiCfNSG1_A
Thank you for posting this! I have been practicing the paleo diet on and off for a few months and getting little cravings in between is hard because I know I can’t eat junk. This saves a lot of time and energy and I feel better knowing there are fun and easy paleo snacks to make without breaking your diet! Do you have any other ideas that may be easy and quick to make to save time and energy? Thanks :)
I hate to the bearer of bad news here but I have to tell you that I completely understand your mental tactic in the whole superstitious thing. I do that too, but I call myself a realist, just to avoid the pessimist label. 😉 I always go worst-case scenario in my head and then when things go well, then I’m happy and if everything goes to hell in a hand basket then well, I’m ready for it!

These dogs are not actually hot dogs, but are Cajun spiced sausages. You wouldn’t want to eat hot dogs on Paleo because it’s not in line with the Paleo philosophy, even though it does seem to be a meat item. Paleo is about getting back to natural foods, which is why you want to make sure you choose high quality ingredients at all times. These mini dogs have plenty of cauliflower to make them a complete meal, but because of their smaller size they are best used as a snack. They provide a few different dipping options, which it’s always nice to have a choice.

Almond butter and most other nut butters, like sunflower, coconut, hazelnut, and cashew butter, are Paleo-friendly and make for a tasty treat. Try nut butter spread on bananas or apples for a healthy snack, or even just a spoonful right out of the jar, which is a decadent treat. If you’re counting calories, cashew butter has the fewest, at about 94 per tablespoon, followed by almond butter with 98. Plus, nuts offer a ton of health benefits, including fighting diseases such as heart disease and cancer, so here are more reasons to snack on them. Note: Peanuts are not Paleo, which means peanut butter is off limits.

Low in carbs and high in phytochemicals, anti-inflammatory compounds, fiber, vitamins and minerals, cauliflower is often a staple of many paleo diets. Steam it, bake it, fry it in paleo-friendly fats or turn it into a pizza base, cauliflower rice, taco wraps or a low-carb version of mashed potatoes. In addition to preventing cancer, heart disease and weight gain, is there anything cauliflower can’t do? https://www.youtube.com/watch?v=-M3zfrwrcBI
As paleo guru Robb Wolf puts it, think of a 100-yard football field. The first 99.5 yards are how long Homo-Sapiens spent as hunter-gatherers. As they became REALLY good at hunting and gathering our bodies adapted to that lifestyle over thousands of years. That last half-yard represents our species after the agricultural revolution, where our diet has shifted (but our genetics haven’t).
I can see how a strict Paleo diet has its place in society for some people, but for me, a very under weight older person trying to gain at least 30 pounds to get back up to my normal comfortable weight, I will sprout quinoa and buckwheat, make my own gluten free breads, have the occasional red potato and rice, lentils and split peas and consume grass-fed and raw dairy products.
These Paleo snickerdoodles made with coconut flour and flax seed eggs are the perfect Paleo snickerdoodles. If you love regular snickerdoodles you’ll love these. I love to bake over the holidays! Hi Stacey, This may seem like a silly question…but I love how you have the cookies stacked in the picture with the paper in between the cookies. What did you use and where did you get them? Did you cut your own from parchment? These look amazing..I am making these as part of a dessert display for a wedding. The bride will LOVE these..she is paleo all the way.

To get an idea of what that means, we turned to the experts, including Loren Cordain, PhD, a professor emeritus at Colorado State University in Fort Collins, Colorado, and the author of The Paleo Diet; Erin Holley, RD, of Ohio State University Wexner Medical Center in Columbus, Ohio; and Lona Sandon, PhD, RD, an assistant professor of clinical nutrition at the University of Texas Southwestern Medical Center in Dallas.

This step is actually optional if you do not mind having flecks of zucchini visible in your zucchini cookies! However, in my house, my kids would not approve of anything green in their cookies, so I always blend the zucchini with the other wet ingredients! I also really enjoy the texture of these paleo breakfast cookies when the zucchini is fully blended.

If you're interested in the paleo plan but don't think you want to be so strict, you don't have to be all-or-nothing with your approach. Consider adopting some eating patterns from paleo and skipping the ones that don't work for you. For example, try just eating more fruits and vegetables and cutting down on added sugars. If you feel unsure about grains or dairy, talk to your doctor or a registered dietitian to determine what's best for your body.
The aim of this approach is to eat like our Paleolithic ancestors, who didn’t have farms that provided food groups like grains and most dairy, and didn’t have access to the fast foods and packaged snacks many Americans nosh on routinely today. “The paleo diet is all about unprocessed, natural foods: Think vegetables, fruit, meat, seafood, natural fat sources, nuts, seeds, and eggs,” says Ginger Hultin, RDN, a wellness coach with Arivale based in Seattle. https://www.youtube.com/watch?v=N80LZL2vw3A
High in antioxidants, vitamins and minerals including magnesium, copper, vitamin E and riboflavin, almonds are a great paleo option that’s been shown to improve cognitive ability and reduce your risk of developing many degenerative disorders. They’re also alkaline which makes them great to improve your body’s ability to process insulin, improve digestion and reduce the risk of developing osteoporosis and various cancers.

This snack has Paleo written all over it. It has just the essential ingredients needed for a fried almond snack, and they’ve made this incredibly simple to follow. Almonds are one of the healthiest nuts you can eat, but sometimes they can get a little boring. By frying them you immediately improve the taste, and since they have you frying them in a Paleo approved oil you will be staying on the Paleo path. Rosemary is an herb that really goes nicely with almonds, but the ghee steals the show in terms of taste, giving the almonds a nice buttery flavor. https://www.youtube.com/watch?v=oRafxW1OaUc

Take sweetener, for example: replacing white sugar with coconut sugar is one of the simplest swaps I can think of. Nonetheless, even that small change creates a cookie with a different flavor (less sweet, more caramel-y), texture (may spread more or less, or be more grainy, depending on the coarseness of the coconut sugar you’re using), and color (browner, for obvious reasons). https://www.youtube.com/watch?v=E-TDu1F0ZTA
These skittles are made totally with fruit or vegetables and coconut butter. It’s the combination of the fruits and veggies that make them so good. The recipes for all 7 different flavors are included. The ingredients listed above for maroon consist of all the ingredients. The other colors only have the ingredients listed that are not included in the maroon variety. All you need is a good blender and a food dehydrator. Although I have dried fruits in the oven before. The oven is faster but necessarily better. Just turn it on the lowest heat possible. I put links to two different dehydrators because one is way more affordable than the other. I have the cheap one and it works fine. But if you think you might use it a lot it might be worth the investment to get the more expensive one. Since the skittles are dried they can be stored at room temperature for a long time. That makes them handy to keep in your purse or bag for a time. I’ve also been known to freeze. dried foods and they keep just fine for a really long time.
I’m sure primitive man ate some grains and legumes but likely in much lower quantities than anyone does today. Many raw legumes are toxic so they were probably avoided until agriculture/cooking began. Fruit is an evolutionary co-adaptation between flowering and fruit bearing plants and the animals that disperse the seeds. The fruit is delicious and nutritious (but only when ripe–green fruit contains anti nutrients to discourage premature consumption and again… the seeds are often toxic)

I do that too, but I call myself a realist, just to avoid the pessimist label. 😉 I always go worst-case scenario in my head and then when things go well, then I’m happy and if everything goes to hell in a hand basket then well, I’m ready for it!
I respectfully must challenge the entire approach and inherent contradictions offered. You list herbal teas so I assume caffeine tea and coffee are taboo in spite of many positive health benefits. How many women have damaged their reproductive cycles drinking unregulated doses ‘herbal teas’ and when were coffee and tea expelled from the Garden of Eden as not themselves herbal. Language is descriptive, not prescriptive. You O.K. items such as almonds and sprouts. Has anyone considered the massive water use to produce one almond VS dairy milk? Water will be, if not now, the driving force of conflict in the coming decades as oil is now. Sprouts are notorious for bearing pathogens and outbreaks of salmonella. I could go on; depleted fisheries with mercury and plastic particulate tainting, indigenous peoples murdered, raped, enslaved or displaced for planation world crops and grazing, monoculture agriculture destroying biodiversity and a healthy food base. You have also ignored many foods of a true ‘paleo diet’ because of the same cultural norms that lead
Coconut flour is not interchangeable with almond. It absorbs a TON of liquid so the ratios would be quite different as well as the texture. Coconut flour tends to be chalky when used by itself so I would not suggest switching it out in this case. Also, I find coconut flour to be way more expensive than almond flour. You can make your own almond flour/meal if you don’t want to buy it and save $ that way. Just process almonds in a food processor until flour-like.

Cashews are inedible in their natural state and are actually very poisonous if consumed without extensive processing. Also, while subject to debate, cashews are generally considered legumes. Some people accept them as Paleo foods and others do not. It’s up to you to experiment and decide. Cashew milk is further removed from its original form. Remember, it is best to consume food in its natural state. Coconut milk is a much better option if you are looking for a milk substitute.
These crackers are easy to prepare and it’s always a good idea to have a crunchy food around to munch on. These are very versatile, you can use them to scoop up any dip you create, or you can make a chicken salad and use them for that as well. They only have three ingredients, so it’s easy enough to keep stocked up and since it doesn’t take long to make these you don’t have to worry about storing them you can just make them as you need them so they’re fresh and crispy.

Also made these and got one big thin flat mess, with an almost rubbery texture. My baking soda is still fresh, i didn’t use ANY substitutions and i’ve double checked the recipe multiple times and according to it I made them correctly. Perhaps you mistyped and it’s baking powder instead of soda? Yours look good, but the ones i made are pretty awful.

Nothing good comes from unnecessary complication. I intentionally designed this recipe to stick as close to the tried-and-true conventional chocolate chip cookie recipes as possible. If you scroll down and look at the recipe (go look… I’ll wait… come on back here when you’re done!), you’ll see a lot of familiar ingredients: fat, sweetener, flour, baking soda, vanilla extract, sea salt, dark chocolate chips, etc.- but in paleo cookies, they are all gluten free, unprocessed, grain free versions. https://www.youtube.com/watch?v=k_JUritU2IE
Cooking and consuming seaweeds can be intimidating because they can seem quite bland, tough or bitter at first glance. With the proper seasonings and cooking though, they can become a real treat. In the following snack, nori sheets are simply rubbed with coconut oil, seasoned with sea salt and a small amount of sesame oil, then roasted very briefly. https://www.youtube.com/watch?v=esJSqaaoibA
In the long term, you have to be sure you’re getting calcium and other nutrients you’re missing by not having dairy products and certain grains. Some paleo-approved foods, such as salmon and spinach, contain calcium, so you have to be sure you’re including them in your diet. It would be a good idea to check with a registered dietitian, too, to make sure you’re meeting your calcium and other nutrient needs. https://www.youtube.com/watch?v=l7JHpDDGZUk
When you're eating paleo, the worst part of the day is in between meals, when a snack craving hits and all you want is a bag of chips. We're here with some good news: Lays is still off limits, but with options like Brussels sprouts chips, roasted edamame, and veggie sushi, you'll look forward to snack time again. And if you're going keto, check out out healthy keto snacks, too.

Because the density of almond flour varies brand to brand depending on how finely ground it is, you may possibly want to add an extra tablespoon or two of almond flour to your dough if you are using a different brand than the ones I’ve mentioned. If you’re nervous, you can bake a test batch with just 2-3 cookies and see how they spread. If they spread more than you like, add a bit more flour and give that a whirl. https://www.youtube.com/watch?v=DwVwQiqe4eM
Similarly, any foods that were not easily available to Paleolithic humans are off-limits in this diet, Holley explains. That means processed foods — many of which contain added butter, margarine, and sugar — should not be a part of the paleo diet. The same goes for dairy, which may not have been accessible to Paleolithic humans, and legumes, which many proponents of the diet believe are not easily digestible by the body.
To further the discussion, Marijuana is an intoxicant that is so much stronger since the 60s (the best buds were propagated for generations) that it seems to be ‘turning on’ schizophrenia- like symptoms for the unlucky few who carry those genes.  The psychosis goes away the first few times they quit, but eventually does not go away even if they quit.
I’m not overweight (am 112 lbs) and am physically fit. People do this diet for many reasons. The reason I decided to do it is obviously not because I want to lose weight, but because my energy levels are at an all time low with no physical explanation (all tests prove fine). I’m celiac so I already can’t eat gluten and am also dairy intolerant. But even after eating something healthy like oatmeal with coconut yogurt, I am exhausted and struggle to stay awake. It’s been suggested that maybe I need a detox and eliminate all grains and higher carb foods for a little while to let my body readjust so that’s the reason I’m trying this diet. So if it doesn’t work for you, don’t do it. But why criticize it?
*I get a lot of questions about the difference between almond meal and almond flour. Although the terms are generally used interchangeably in packaging, your best bet is to look for a product that is called blanched almond flour (or blanched almond flour/almond meal). You want a product that is very finely ground and cream colored without any specks of brown in it. I recommend Honeyville Blanched Almond Flour (found online) or Bob’s Red Mill Blanched Almond Flour (found online or in the natural aisle of many supermarkets; sometimes, in stores, the packaging reads “blanched almond meal/almond flour”). Read more about the differences between almond meal and almond flour – and what you should be thinking about when selecting ingredients – here. https://www.youtube.com/watch?v=RRCgH9ZQj2o
I have some ideas on to why cookies might be flat. When I measured the oil into the pan before melting it was easy to get a little too much in there, so I measured again after melting on the way to the bowl and sure enough there was a good tablespoon left melted in the pan. So make sure to remeasure after you melt the oil. Also baking soda does expire so if you aren’t using it a lot make sure the check the expiration date. If it’s too old it won’t work! https://www.youtube.com/watch?v=BlKj2aWp0F4
These tomatoes are filled with the irresistible taste of buffalo chicken. Even though chicken wings are easy to make on the Paleo diet, it’s still a good idea to even them out by eating a vegetable along with them. Here you can get the taste of buffalo wings but in bite size form, with no bones, and no need to supplement it because the tomato has you covered. Plus you’re getting all of the benefits that come from eating tomatoes, and this snack will hold you over for quite some time.
Also Dairy, an article was published in “Nature” magazine a few years ago, and then later on in other magazines, stated with the latest DNA Technology, and other fancy stuff, they’ve managed to solve a mystery, about a 9.000 year old “Bathtub” kinda looking thing, with small holes in the bottom, which showed that they did consume Dairy, as the “Tub” was to drain of “Lactose”, so they made Cheese!
I have been a follower of yours for a VERY long time as well as Paleo for 2 years now. I have Iost 50 pounds and way more inches I can account for. I went from a fluffy size 16 to a very thin size 4. I feel incredible. Better than going GF alone. I think to myself, I must have had intolerances to other grains and not realized it. I truly appreciate your sharing your dabbling in Paleo. I can relate to needing a cookie just for mom every once and a while. True, made me giggle. Make sure your Paleo readers get the lowest sugar content chocolate chips possible. We get the bars and chop them up.
If you’re craving toast or bread, you probably need more nitrogen. You can get that from high protein meats and fish. Don’t think of meat as a “snack”? Make some jerky. Even if you don’t have a dehydrator you can still make jerky. All you need to make jerky is a bit of time, some mild heat, and a dry environment. If you’ve been buying jerky, save yourself some loads of cash and make it yourself!
Taro gets the go ahead here as a sort of replacement for potatoes. They are still pretty starchy so it’s up to you whether you want to allow them in your Paleo eating plan. These will satisfy those looking for a plain potato chip fix, because the only ingredients are the taro, salt and pepper, and olive oil. They’ve kept things very simple, which is a mark of a quality Paleo recipe because the more complicated it gets the less likely it is that it’s natural.
You must double up the recipe because it’s too good not too. Lol I love being gluten free b/c the rest of the family thinks my cookie might be “gross”. More for me! Now, they have requested that I make them and possibly pretend like they are not gluten free and share. But why should i? lol My second batch on week 2 did come together as the first. Almost as it didn’t bind. I’m blaming it on the cold almond meal coming from the fridge this time. It’s in the oven so we will see what happens.
FYI Scott Madden the Paleo diet is really just a general blueprint and most people just do the best that they can–some also just eat according to what they can handle or need and still consider it “paleo.” There are also many different options when it comes to protein powder (many people use pea, hemp etc) and not all of them contain wheat, soy, casein or whey.
Even if you’re not purely Paleo, boiled eggs should be a part of your diet for so many reasons. Not only are they super easy to cook (12 minutes on the stove on average with no mixing or stirring), but eggs are filled with proteins, vitamins, minerals, and good fats. Plus one large egg has only about 80 calories. Boiled eggs can even be found at the grocery store precooked and in packs of two, making it a great grab-and-go Paleo snack. If you’re not a fan of the hardboiled variety, try one of these egg-tastic breakfast cooking tips that we promise you’ll love.
If you want to get your chocolate craving satisfied with your snack time, these energy balls are the way to go. What we’re typically looking for when deciding on a snack is whether it will provide the fuel to get you to your next meal. With these you’ll be able to cruise to your next meal, and you won’t get those groggy or foggy times when you just want to eat and you can’t focus. You also won’t get that panicky feeling that occurs when you don’t know what your next meal is going to be. Have these energy balls and then you’ll be able to focus long enough to plan your next meal or take care of important work.

Alice, I’m sorry you weren’t pleased with this recipe. Assuming you didn’t omit or substitute any other ingredients, I imagine it’s due to your almond flour brand—although “cardboard” is hard to imagine unless maybe you left out the sugar? Almond flours are not all created equal and finely-sifted is definitely not the same as finely ground, which is why I specify. The recipe will work when made as directed, though, as will my other recipes! https://www.youtube.com/watch?v=doCDdxv7ZQ4
The number of things that modern day cooks can do to vegetables is growing, and they’re coming up with new ways to make eating vegetables fun and desirable. This time they’ve managed to make a jerky out of eggplant, which makes it great to include when you’re having some beef jerky. Paleo is all about balancing out your meat intake with veggies, which would make a snack of beef jerky and eggplant jerky a pretty balanced way to go. They provide two different ways to make these, one for those that own a dehydrator and one for those that don’t.
These were awesome! Thank you Monique for the great recipe. I love that they are a nice treat but fill you up so you can have them as a decent snack. I popped one before my workout yesterday morning and it was perfect. I couldn’t get over how great the texture turned out. You must have tested them a lot to get the texture so perfect. Love what you do! Keep’em coming 🙂
Hey Nichole! I do not recommend using coconut flour as a substitute for almond flour. Coconut flour absorbs significantly more liquid than almond flour and your cookies would almost definitely turn out dry. If you cannot use Almond flour I’d recommend trying tapioca flour or an all-purpose gluten-free flour although I haven’t tested either option so I cannot guarantee results. Bob’s Red Mill makes an all-purpose paleo baking flour but I am not sure if it has nuts or not. You should be able to substitute sunflower butter but if they can eat cashews I’d more highly recommend cashew butter as a substitution!

If you’re used to combating the afternoon slump with yogurt, you’ll love this Paleo chia pudding. While the chef here enjoys it at breakfast, it’s really simple to convert this into a snack: instead of making these in a bowl, prepare in mason jars for perfect portions you can take to work with you. Not a big banana fan? Swap in your favorite frozen berries or mangoes instead. I do suggest keeping the sliced almonds in for some healthy fats and crunch.

I made these for a weekend class, I used butter instead of coconut oil but otherwise followed the recipe as is. My recipe only made 16 cookies, not 24 and perhaps I ate a couple before they got to the class :) Anyway, I was so surprised when I had about 12 of the women come up to me to tell me how great they were. Mind you, it’s not a group that knows me except by name. I have never had such a big response to a recipe before. Will be making them for the class again next weekend and doubling the recipe. Thank you!

This product is not only good for your health but also your animals, your home, your property, your health. It is also a natural pesticide and can get rid of ants, bedbugs, fleas, and rid yourself and animals of parasites!!! Clear up your gut problems! Help your bones, cartilage, connective tissue, and collagen!!! And so much more!!! I have been talking to everybody that I know about this product and cannot stress the importance of this vital mineral that our bodies are lacking. There is more research that has been done in the UK than in the US that also proves the vast benefits of FG DE! My hope is that someone here on this site will look into this and comment on it… I’m just a “messenger,” trying to spread the word. I’ve also been looking into the Paleo diet; and when I ran across this post, I felt compelled to reply.
I just got to know about this paleo diet from one of my friend. I have gained some 6-7kgs in 2.5 months that’s because i fractured my leg and no workouts. Now i’m seriously trying to reduce my weight by dieting and excising, but i have vitamin D deficiency and end up getting sprain on my neck or low back while excising . Could you please suggest me the diet that i should be taking. https://www.youtube.com/watch?v=mybgoG_DHZk
I finally kicked my dairy “habit” & have never felt better in my 63 years on this earth! I grew up in the dairy industry & in an era where everyone was expected to eat what they were told was good for them. Think about what cow’s milk is meant to do. A small calf drinks from it’s mother & it turns into a huge animal. Yet, in order to sustain that hugeness, the cow must consume up to 10 times it’s body weight in grasses on a daily basis!
These pizza bites don’t need a crust because they’re resting on a slice of uncured pepperoni or salami. This makes them a snack that you can make in a jiffy, because you don’t have to wait around for the crust to bake. It also helps give them a big pizza taste, even if you opt out of the optional organic mozzarella cheese. The sauce is the real kicker here, and it’s made using organic tomato sauce and the necessary ingredients to make it taste like a pizza. Drop a black olive slice right in the middle and these pizza bites are ready to consumption.
If you’re feeling more adventuresome, though, and are willing to try some additional flours, I humbly recommend the holy grail of chocolate chippers: the New York Times-style gluten free chocolate chip cookies. They not only have a couple extra ingredients, but they must chill in the refrigerator before baking. But to say they’re worth the wait is a dramatic understatement. https://www.youtube.com/watch?v=Oi-920uV3UY

Well in my opinion nothing should ever be called a diet. It is a lifestyle change. People go on diets to go off them. Again it is a lifestyle change when it comes to eating healthy and losing weight. So I really do not know what you are talking about. All these weight loss gimmicks out here, and that is what they are gimmicks, to get people to buy in to this mess,
Our markets today are saturated with all kinds of snack and protein bars.  After a glance at the ingredient list, you may find yourself shaking your head at the thought of these bars being considered a “health” food.  You may not even be able to pronounce some of the ingredients listed on the nutrition label.  Granted, a handful of bars are considered to be Paleo-friendly; however, the price tag that accompanies many choices is considerable.  Some of the simplest and tastiest Paleo snack recipes fall into the category of energy balls or bars.  Set aside a little time and make a batch or two of these goodies to eat as a great on-the-go snack for you or pack for your loved ones.  Check out these tasty ideas:
These are very good and very flexible. The first time I made them, they came out flat and browned at the bottom and were delicious that way! Determined to make them as illustrated here, I tried again. I cut the honey to 1tbs (both times, I left out the almond milk) and adjusted the amount of almonds to get a thicker dough. This time, they stayed round and were crunchy throughout (I blame my thin cookie sheet). The first flat batch was better and I will make them that way again.
If you just crave sweets in general (not an easy craving to fight off), you could be low in a number of nutrients, namely, sulfur. Cruciferous vegetables like broccoli, cabbage, cauliflower, kohlrabi, bok choy, kale, rutabaga, collard greens, turnip (root or greens), maca, radish, and wasabi, among others, are great sources of sulfur, Vitamin C and fiber. They’re also great for fighting off cancer cells.
I’m vegan, and my boyfriend is (mostly) paleo. As soon as November hit I got a serious craving for chocolate chip cookies! I wanted to make something we could both enjoy, and after much research, I landed here. My guy is a chef, so he’s quite the critic. Until NOW, I haven’t been able to impress him with vegan/grain free cookies. This recipe is perfect! I made my own almond butter (wouldn’t have if I hadn’t run out…a blessing in disguise!), and used the coconut sugar, chilling it like you said. Luckily I didn’t bake them all at once, or they’d be gone! Thank you for this! :)

It was really hot here today, so I didn’t want to run the big oven and baked these in the convection oven instead. As a consequence, my first half of the batch was getting too toasty on the outside and unfinished on the inside, so I turned the temp down to 300 and baked for 15 minutes so the middle would set better. Worked out great, and didn’t over heat my house. I had about 4 tablespoons batter left, and tried adding a teaspoon of cocoa to that bit to make a double chocolate cookie –> pretty darn good, and didn’t change the texture. I now have two cookie flavors from your recipe. I will also try adding coconut flakes someday, and the chopped toasted pecans on another day as was mentioned in other comments.

I made your cookies and they are great!!! I have been trying different recipes and none of them were just right for me. I did everything by the recipe except one item. When I placed them in the fridge – I decided to try rolling them into a log so that I could just slice and bake and for me – they turned out great and that was so easy to do. Thanks so much for posting this recipe!
These are such fun to make! I used regular sugar instead of coconut sugar because I was out. They are very quick to mix up (I didn’t wait for the nut butter or egg to come to room temperature because I am impatient) and very quick to bake. I appreciate easy, delicious, gluten free recipes that I can make with my kids and not end up irritated or with a huge mess to clean up! We will be making these again and often I suspect. Thank you for the lovely recipe. https://www.youtube.com/watch?v=lpygmaabb9E
