Chocolate chip cookies without any sugar or chocolate wouldn’t really taste like chocolate chip cookies anymore…you could try substituting a calorie-free sweetener for the sugar if that’s what you’re looking for. Since cacao mass has no sweetener, I imagine it would be pretty bitter in cookies, but you could give it a shot – I’ve never used it before so I’m unsure of how it will work.
These were my first attempt at keto cookies and unfortunately I was too busy juggling mom duties that I baked them for 25 min rather than the correct time. Obviously, they were burnt but actually still edible (and I never eat burnt cookies lol)…so I’ll have to try again this weekend. I’m curious though what products you used…I imported the recipe into MyFitnessPal and subbed my products and it came to 8 carbs per cookie…I like your numbers better…
These are very good and very flexible. The first time I made them, they came out flat and browned at the bottom and were delicious that way! Determined to make them as illustrated here, I tried again. I cut the honey to 1tbs (both times, I left out the almond milk) and adjusted the amount of almonds to get a thicker dough. This time, they stayed round and were crunchy throughout (I blame my thin cookie sheet). The first flat batch was better and I will make them that way again.

I’ve made some other paleo sweets, none of which have been well received. He was so excited to help me make them and even more excited to help eat them!
