In a large bowl, place the almond flour, coconut flour, salt and baking soda, and whisk to combine well. Add the palm sugar, and whisk again to combine, working out any lumps in the sugar. Create a well in the center of the dry ingredients, and add the coconut oil, eggs and vanilla, mixing to combine after each addition. Chocolate chip cookies without any sugar or chocolate wouldn’t really taste like chocolate chip cookies anymore…you could try substituting a calorie-free sweetener for the sugar if that’s what you’re looking for. No on paleo diet but awesome cookies. My husband’s favorite and kids loved it too. Very crispy cookies. Used 1/2 cup of coconut oil to help it form better. Probably could have used a little less. Kids allergic to almond so used whole wheat pastry flour. Used Agave nectar 6 Tablespoons, added 1 tablespoon of chia seeds and 1 tablespoon of flax seed ground. By the way this is my favorite cookies. Next time I’ll try adding oats.

Made them last night, melted the honey to make it measure better, and then the cookies spread (but not awfully bad, we ate them with a spoon). This morning, I baked up the last 3-4 cookies and they came out exactly as described. I can only assume having the coconut oil and honey at room temp helped, next time I’ll make the dough and let it rest for a bit before I bake’em up. I wanted to point out the similarity between the paleo diet and the more revolutionary diet being used by diabetics (as opposed to that espoused by the World diabetic associations) to remove carbs from the diet and have high protein / moderate fat to achieve almost normal blood sugar levels. I have tried several low carb or paleo chocolate chip recipes. Made these last night, used half erythritol and half coconut palm sugar. I may have baked 1 min. longer, they came out crispy. But they tasted great and I love crispy cookies anyway, but next time I will bake according to the instructions. I’m sorry to hear these didn’t work out for you. I’m not sure what you mean by “the flour never became anything but crumbled powder.” Were you making your own almond flour, and the ground almonds didn’t become fluffy enough? Or do you mean that there wasn’t enough moisture for the cookies to hold together? I’ve made these cookies many times, and this ratio of maple syrup and coconut oil (or butter) has always produced a delicious result. You can always add additional coconut oil or maple syrup if the cookie dough doesn’t look like it will hold together. I hope you and your family have a Merry Christmas, regardless!
Contrary to popular belief, our body’s preferred source of fuel is fat, not carbohydrates. Therefore, quality fats are an important part of the paleo diet. Fats won’t make you fat. Instead, they’ll encourage your body to burn stored energy and can even contribute to reducing cravings for sweet, carbohydrate loaded foods. People who include some healthy fats with every meal have also been shown to eat less because fats are so inherently satisfying.
Hi Dave, sorry for your troubles! More likely than not, the problem is that your almond flour is too coarse. I’ve added a link in the recipe with the brand I recommend (Honeyville) – it’s blanched and very fine and acts much more similarly to a traditional wheat flour than some coarser almond flours/meals do. In the meantime, you could try baking the cookie dough you have in a pan to make blondies so it doesn’t go to waste. Hope it still tastes delicious! Happy New Year.
