Of course im on humira, after 6 other medications failed to bring relief from the chronic extreme inflammation. My hair is falling out at an alarming rate. I began researching paleo and autoimmune disease and realized I could reverse every bit of this and send these diseases into remission by getting off the grains and carbs and dairy. And GLUTEN. Its all a bit overwhelming but I bought a cookbook and have been reading here a lot and for the first time in years, my pain is a 2 out of 10 after 2 weeks of cutting gluten and dairy and sugar. Ive literally eaten nothing but lean protein and low glycemic fruits and veggies. Also a lot of eggs and lots of water. I know it has taken many years to get in the wretched shape I am in with autoimmune disease and I can’t reverse it overnight but it is now my mission. My husband and kids are feeling better already as well. Cant wait to ditch the humira and steroids. Thank you!!

Assuming you didn’t omit or substitute any other ingredients, I imagine it’s due to your almond flour brand—although “cardboard” is hard to imagine unless maybe you left out the sugar? Almond flours are not all created equal and finely-sifted is definitely not the same as finely ground, which is why I specify. Monique, I’ve been lurking on your blog for a while but never made one of your recipes. After printing this one out a while ago, I finally felt motivated to make these and loved them! They are using gingerbread seasoning on these, which is an interesting choice for a snack, and sure to give your taste buds a new experience. Compared to most snacks you’ll enjoy the fact that these rank pretty well in terms of the amount of carbs they contain, as well as the calories. Not that you’re counting any of that stuff on Paleo, it’s just nice to know.

I am a type 1 diabetic and my husband is a type 2. I have just finished battling 7 years of abdominal tumors that I had 25 lbs of tumors removed from my body. Because of the removal of these, my body has been going through some adjustments. I am dumping magnesium and iron, and the doctors don’t know why, plus I have become constipated with the high doses of iron that I have to take, but then I take high doses of magnesium that causes bouts where I need to be near a bathroom. Talking to a nutritionist and my doctors, a change in diet has been recommended. They both brought up a modified Paleo or Keto diet. My nutritionist wants me to eat there foods for sure everyday, pearl barley cooked in bone broth (homemade of course), greens ( cooked kale, collards, turnips, mustards, etc) and fish. The barley is to help with fiber and magnesium, and the greens for fiber and magnesium and iron. Will adding a cup of cooked barley make a bad difference in either of these diets, or will that amount everyday throw off all good effects of this diet? I am so tired of taking synthetic solutions for my problem. I am on excellent pre and pro-biotics and have seen great results from those. YUMMY! I am new to the paleo lifestyle. I have been trying new recipes out on the family. They all love this. I doubled this recipe. I only cooked seven cookies because the batter is so good. My husband said he would easy these paleo chocolate chip cookies over regular chocolate chip cookies any day. I also ate a small amount of batter, maybe a little more than that,but I’m so full. My children love these and they don’t even care that they are eating something healthy. I like to make 2-3 pans of them and save them for later. They can be eaten just like potato chips if you want to. These zucchini chips are a great snack but they can also be a great side dish vegetable for dinner. Just don’t cook them until they’re crispy. I cook mine for about half an hour for a side dish. Sometimes I like them without all the spices so I just leave out the curry powder and garlic powder. I also think they are best when I use Course Real Salt.

Get yourself a top round roast and slice it as thinly as you can (or get your butcher to do it). The best jerky is made with just a few ingredients (but everyone’s taste buds are different). You’ll want to combine coconut aminos, some spices, and coconut sugar (yes, it isn’t totally Paleo; you can use honey instead). If you want the flavor that liquid smoke imparts, feel free to add it in. I just made these with Stevia. I replaced all coconut sugar with about 1/2 tsp Sweet Leaf Stevia powder then tasted the batter before I divided & baked. I added just a hint more stevia because (true confessions) I LOVE SUGAR! I also went heavy on the vanilla because really, stevia has a little bitter aftertaste and the vanilla helps cloak that. These are delicious. I am expecting that the swap brings the caloric value of the cookie down by approximately 30 calories/cookie if the bath made 12. I only got 10 after sampling a few spoons (heaping) of the batter.

We’ve made these a couple times now and the 2nd time they were amazing!! The first time, I tasked my daughter, a self-proclaimed baker, with making them. We didn’t have any eggs in the house so I made an egg replacement using flax/water. She thought she was using parchment paper but actually used wax paper to line the pan. OOPS!! So the 1st batch were a flop. Definitely stick with making them SMALL!! She opted for large cookies and they spread out to cover almost the entire cookie sheet. So the next time, I made them myself with an egg, parchment paper, and kept them small. Like I said, they were amazing!! I’m low carving, so I used Xylitol as my sweetener and didn’t use quite as much as the recipe called for simply because I prefer things a little less sweet these days–I’m turning into my Grandma! When I was in my teens she suggested not adding as much sugar as recipes called for (Grandpa was diabetic at that point) and I thought she was crazy. Now I’m in my 40s and my taste buds have totally changed. But anyway! Thanks so much for a delicious recipe! They definitely hit the sweet spot of my craving!
