I just made version #2, and it was delicious. My pan was slightly larger, but I kept the 30 minute cooking time. It came out more golden brown on the outside, but it was perfectly moist. This is SO much tastier than store loaves, and I love slicing it thick. I greased my pan with butter and coconut oil and lined it with wax paper on the bottom, and it slipped right out.
I made this bread yesterday for the first time, baked well or so I thought an then while cooling it began to cave in the middle, wasnā€™t fully cooked, put it back in the oven an took forever to cook. Not sure what went wrongšŸ˜ž I followed the recipe exactly except I didnā€™t add the flaxseed as I didnā€™t have any available, bit sure if that would have mattered!! Please share what you think I can correct for next time, otherwise bread was good!!

Another great recipe! So quick and so easy and so delicious! I used normal ground almonds, so the texture is more coarse and the bread turned out a darker than on Adrianaā€™s pictures. I used coconut oil instead of butter and as I didnā€™t have enough arrowroodpowder at home I made half the amount and made muffins instead of a bread loaf. The baking time can be reduced to approx. 15 min. when making muffins.They turned out really fantastic, fluffy, moist and if you like the taste of coconut you should definitely make them with coconut oil instead of butter šŸ™‚ I also love, that thereā€™s no sugar involved! We made the mix as directed. We then mixed 1/2 cup coconut sugar and 1 Tablespoon cinnamon in a separate container. Pour 1/2 of the bread mix in the pan, followed by 1/2 of the cinnamon/sugar mix. Then put the rest of the bread mix in the pan and cover with the rest of the cinnamon/sugar mix. Then swirl with a knife. Great bread for having with stew or soup!
I donā€™t have a processor big enough for the ingredients so I used my big mixer. I was afraid that the bread would come out tough because I used the mixer, but it wasnā€™t. It came out light and delicious, with a nice brown crusty crust and a soft inside-I love the nutty flavor. This one is a keeper- Iā€™ll be making this often. Ditto your paleo breakfast bread.
